I can’t believe it’s nearing the end of August, the summertime, light, warm evenings that make food blogging fun and simple! I also can’t believe with September approaching that I would have been doing this for THREE years. To some, that might not seem like a long time, but in my perspective, I started cooking with a one year old on my hip and a two year old wrapped around one of my legs, and now they’re both in school!! {Tear} :-( Life has gotten a little simpler and quieter, which is kind of sad in many ways, but it does give me a little more time to dedicate to creating more delicious recipes! The further along I go in this “process” the more I learn about myself, my tastes, my families tastes and my cooking style– and I have so much more to learn i’m excited to keep on going! One thing I have discovered is how much I LOVE making and eating Indian food!! Some of my absolute BEST, most favorite recipes are in my Indian cooking section, and I am so excited to add one more on there today!

Crispy Shrimp Tacos with Avocado Ranch Lime Dressing

I have been excited to share this recipe for a while now! I made these crispy shrimp tacos this summer on a whim without writing down the recipe or taking any pictures. Maybe because I didn’t have very high expectations, or was feeling a little burnt out with blogging and was kinda busy– but as soon as I tasted them, I instantly regretted it. Not only were these tacos the BEST I have ever made {which doesn’t tell you a whole lot, because I really haven’t made very many!} But they are some of the best I have ever tasted, ever!! The ranch avocado lime dressing is so thick and rich and creamy–that it doesn’t taste healthy at all! Even though it really is! The shrimp are crunchy and perfect, and the coleslaw… I could eat by itself for days! It has the perfect combination of heat, saltiness, sweetness and acidity. I am in love with this recipe–I think it’s one of the best I have posted yet! So I hope you guys all love it too!

Life has been pretty crazy this summer, and I have gotten WAY off track with the blogging! I wish I could say that things will slow down, and I will be posting as often as I used to– but the truth is, life is only going to get crazier from here on out, as we anticipate some big, exciting changes! But if there is one thing I have learned from taking a step back, and prioritizing my time, it’s that quality is always more important than quantity. So although I won’t be posting as MANY recipes, the ones I do post from here on out will be much better!!

Shrimp Tikka Masala, Mango & Jalapeño Skewers

This week I thought I would play on one of my all time favorite recipes, and in celebration of summer approaching, make some chicken tikka masala skewers. But when I got my chicken out, it had already gone bad, so I deferred to some shrimp I had luckily sitting in my freezer instead. Usually when something doesn’t work out the way I had planned–it actually turns out better, which is the case with these shrimp tikka masala skewers! I wish the shrimp I had on hand, had tails on them, and were slightly prettier, but with the orange mango, and green lime and jalapeños, they actually turned out vibrant, and kinda pretty. The flavors worked awesomely together! Usually I pair my tikka masala with mango chutney, so the sweet mango slices were a MUST, then I added some jalapeños for some additional heat, and some lime wedges. I was going to serve them on a bed of rice, without the sauce–but my husband and I both agreed that the masala sauce was the best part, so I added it at the last minute, and i’m so glad I did! I spooned some of it over the kababs while I was cooking them, and it added a lot of extra flavor and color! I invited my bro in law Dexter over for dinner, and we all LOVED these! They are one of the BEST things I have made in a really long time, and can’t wait to make more this summer! I hope you guys all enjoy!

Prosciutto Wrapped Asparagus Fries

I am the only one in my little family who likes asparagus, so I rarely cook it because I can’t get anyone to eat it! Then recently I found a recipe for parmesan fries on pinterest that seemed to “disguise” the asparagus enough that my kids wouldn’t know what they were eating, and delicious enough that my husband wouldn’t complain–so I made a couple of different versions with high hopes, both of which were horrible! The first, I thought i’d be clever and creative, and added some citrus–which was SO gross that it almost put me off asparagus {with the rest of my family}. Then the second was a classic, popular recipe–but I just couldn’t get the flour and egg and parmesan and panko to adhere to a smooth, shiny, thin asparagus spear, and it was a huge, frustrating MESS!

Then yesterday as I resolved to master attempt number 3 {the more something defeats me, the more determined I am to defeat IT!} I decided to wrap prosciutto around the asparagus first. Not only would this help the heavy mixture of flour and egg and cheese and panko actually STICK to the spear, but I knew my family would LOVE it if it involved bacon, {even in its slightly healthier form}. It worked like a charm! They were salty, and cheesy, and crispy and pretty heavenly! I served them alongside a couple of steaks, but they would be great dipped in a cheesy, creamy alfredo sauce too! Yum!
