I’ve been having fun making some “green” recipes this week in honor of St. Patrick’s day, but I also wanted to try making something that was traditionally Irish– so I thought i’d have a go at making Colcannon for the first time ever. It’s basically just mashed potato with kale or cabbage mixed in — but I was kind of taken aback by how something so simplistic could be so clever, and SO delicious. You can also add bacon, but since I wanted to serve it with Corned Beef, I thought that would be a lot of salty meat, and a little too heavy on the calories, so I kept this recipe light, and creamy, and it complimented the corned beef perfectly! I really can’t believe I have never tried this before, but I can’t wait to make it every St. patrick’s!

Spring is finally here in Mattawa! Hooray! It’s sunny and warm and bright, and life is good! This time of year always gets me excited to make fresh, healthy, delicious, seasonal recipes… which is a nice change up from those heavy, winter comfort classics, that always make me gain a pound… or ten! :-/ We have lots of exciting trips and adventures planned, which inspire me to get into my best shape, but more than that, i’m just excited to FEEL good, and get tons of fruit and vegetables into my diet in the most delicious way possible! My Thai yellow curry recipe is one of my absolute favorite things on my Blog! Sadly my photos don’t do the recipe justice at all, but it is thick and creamy and flavorful and a little bit spicy, and a little bit salty, and everything a perfect thai yellow curry should be. So naturally, when I came across RED curry paste at the store the other day for the first time ever, I had to try it, and model the recipe after my yellow curry which I worked so hard to perfect. I changed up a few of the veggies {and added mushrooms, because they just make everything better}, and served it with rice noodles, but the result was still the same: thick, creamy, spicy, salty, tangy HEAVEN! I am in love with yet another curry recipe, and hope you love it too!

How to Cook Perfect Indian Pilaf/Pilau Rice

I mentioned recently that the “focus” of my Blog this year, is to create recipes that I would want to print in a personal cookbook, if I ever decided to publish one in the future. This helps give me clarity as I think carefully and more clearly about the recipes I would love enough to make time and time again, and be proud to pass on to my friends and family. I’m still learning, and am unsure what my “forte” might be, but one thing I DO know, is that this book would have one big, fat awesome indian section in it! I just love cooking and eating Indian food too much–it’s a problem, so much so, that i’m actually going to start doing Yoga or running first thing in the morning {I can’t decide on which yet}. I wish I could be more decisive in life! But all I know is that for now, I am going to be doing a lot of Indian cooking as I work my way through a list of popular dishes I am determined to master this year.

Lamb Curry

I just realized I haven’t made a single blog post since last year! Okay, so that was only two weeks ago, but that just might be the longest gap i’ve had between blog posts, ever! Not only has life been a little crazy, {I told you I might fall off the planet when I turn the big 3.o and it happened!} :-/ But since it’s the start of a new year, I have also been re-organizing and re-assessing life, my priorities, my home, and my blog. I decided this year to start going in a “cookbook” direction! It’s not because I want to publish a cookbook by the end of the year, but I want to start thinking about the kinds of recipes I would want in my own cookbook if I was to ever create one. It helped me get a clearer perspective on the things I like to cook and eat, and right up there at the top was Indian food! I LOVE all my Indian recipes, and am so excited to add this one to the repertoire! I’m also excited to make lots more Bombay-house-inspired dishes this year, so watch this space! Until then, here is the most delicious lamb curry I have EVER tried! Enjoy!
