Wild Mushroom Risotto

Two months ago I attempted my first ever risotto- and it was so good; it inspired me to attempt risottos of all kinds. I decided to start with a wild mushroom risotto, just because I love mushrooms so much! I’m not sure why– but I think it’s because i’m a girl! (In my family, my husband, my Dad and all three of my brothers hate mushrooms, but my mum, my three sisters and I all love them!) I’d like to know if that’s a pattern in your families too!

This evening we had an etiquette night for the youth in my ward with a three course meal. Luckily I didn’t have to prepare all of it, but I was assigned to do the soup, and I had a great one in mind! This recipe comes from one of my favourite cook books ever (Lion house classics) and it’s so simple and delicious that I just had to share it. It also got mad reviews from everyone I served it to.

We would take off on his motorbike, see some beautiful sights–and end up at some random little restaurant. One of my favourite places to go was the Olive Garden- because i’m pretty much obsessed with pasta, and their soups and salads are so good!
