I know heart-shaped ravioli is about as cheesy (no pun intended) and cliche as valentines food gets, but I just couldn’t resist this year, because it’s so stinkin’ cute and down-right DELICIOUS! I know I say this all the time, but this dish really is one of the best things I have ever eaten. If a restaurant near me sold this, I would go back again and again–i’m not even kidding! I love pasta, I love, love, LOVE mushrooms–and bacon? Who doesn’t love bacon? The combination with the cheesy, creamy parmesan sauce is about 1000 calories of PURE sweet heaven! I just use valentines as an excuse to eat it… it’s a celebratory occasion right?!

My mother and father in law just gave me the most AWESOME new kitchen toy for christmas this year, and I have been dying to try it out ever since! The Vitamix is a kitchen appliance used by professional chefs, and by companies like Jumba Juice to make just about anything! It chops, purees & creams, blends, cleans-itself, heats, cools and more. To be honest, it’s a little bit intimidating because it is so intense, and has so many capabilities, so I decided to start out with something really basic and simple–this shrimp and crab bisque.

This week we had the opportunity to go to Utah to see some close friends and bring the new year in with my older brother and his family (who I haven’t seen in YEARS) but as perfect as timing gets, I came down with a horrible cold and didn’t feel much like traveling 10 hours in a bus with two  toddlers in tow :-( So instead we decided to have a quiet night in, make a special dinner, open some Martinelli’s and watch a couple of movies. It was relaxing, and perfect really.

Brie Stuffed Pears

One of my husband’s all time favorite things is Bris so I thought i’d whip him up these bris stuffed pears for lunch the other day (and by the other day I mean this time last week, because I am really behind… again! :-/ Which may account for some “mass posting today.”) I was feeling kind of bold and daring and thought i’d see how they tasted with prosciutto and I found out–NOT very good at ALL! I almost didn’t post this recipe because of that, but the bris stuffed pears themselves were SO spot on and delicious, I couldn’t resist. I mean, who could resist honey brushed pears filled with melted bris cheese, topped with caramelized hazelnuts? These are SO yummy!

Lobster Mac & Cheese

I have never had lobster mac & cheese before, but I have wanted to try making it for quite some time now, because it casts some of my all time favorite ingredients: lobster, cream, goat cheese, gruyere, pasta, romano, butter! I had no idea how it would turn out, but with a list like that I could only imagine it would be one of the most delicious things I have ever eaten in my life, and I was right! I wanted to wait for a special occasion to make a dish like this, but I got impatient and decided a sunday dinner was special enough! I’m so glad I didn’t wait any longer, not only because it was to die for delicious, but also because it was actually way simpler than I was anticipating it to be. I found the recipe from one of my all time favorite restaurants Carabba’s: I have never found it on the menu there before, but they feature it in their cookbook, and it looks every bit as divine as it tastes! So if you have some special occasions coming up: Christmas Eve, Christmas Day, Boxing Day, New Year’s Eve, New Year’s Day… Sunday dinner! This is a FABULOUS recipe to have on hand! I hope you all love it as much as we did!
