Yesterday as we were pulling out all the christmas decorations to decorate for christmas, I stumbled upon an old christmas cooking magazine that contains some of my favorite English recipes on earth!! A couple of years back I made a pork and potato roll from it, and it was so divine, I decided to make it again this year– but with a little twist– Cornish Pasty style! The salty, tangy pork, potato and onion mixture inside the warm, flaky puff pastry was the perfect thing for a cold, cosy autumn day inside with the family, who mostly all have rotten colds! This recipe was so quick, easy and delicious, i’ll definitely be keeping it close by this season, and i’m also super excited to share lots more delicious English recipes! Prosciutto Wrapped Asparagus Fries

I am the only one in my little family who likes asparagus, so I rarely cook it because I can’t get anyone to eat it! Then recently I found a recipe for parmesan fries on pinterest that seemed to “disguise” the asparagus enough that my kids wouldn’t know what they were eating, and delicious enough that my husband wouldn’t complain–so I made a couple of different versions with high hopes, both of which were horrible! The first, I thought i’d be clever and creative, and added some citrus–which was SO gross that it almost put me off asparagus {with the rest of my family}. Then the second was a classic, popular recipe–but I just couldn’t get the flour and egg and parmesan and panko to adhere to a smooth, shiny, thin asparagus spear, and it was a huge, frustrating MESS!

Then yesterday as I resolved to master attempt number 3 {the more something defeats me, the more determined I am to defeat IT!} I decided to wrap prosciutto around the asparagus first. Not only would this help the heavy mixture of flour and egg and cheese and panko actually STICK to the spear, but I knew my family would LOVE it if it involved bacon, {even in its slightly healthier form}. It worked like a charm! They were salty, and cheesy, and crispy and pretty heavenly! I served them alongside a couple of steaks, but they would be great dipped in a cheesy, creamy alfredo sauce too! Yum!

Brazilian Hotdogs

My husband lived in Santa Maria, Brazil for two years when he was younger, serving a church mission, and while he was there he discovered Brazilian hot dogs! He has made them for me countless times over the past decade we have been together {not to make me sound old or anything!} And every time he does, he tweaks the recipe ever so slightly to improve it. Today they were SO spot on delicious, that we decided to write the recipe down so we can make them this way every time! We added pommes frites, but you can make these quickly and simply without, and even add peas or corn, which is a pretty traditional thing to do! Has anyone else out there tried Brazilian hot dogs before? How do you eat them?

Mini Tepenade, Cherry Tomato & Mozzarella Pizzas

A couple of months ago my mother in law made us some tepenade flat-breads with prosciutto, sliced buffalo mozzarella cheese and freshly torn basil, which were pretty much pure heaven on earth, and a huge hit with everyone! I decided to recreate a similar recipe with mini pizzas. I already had a batch of tepenade in the fridge, so these came together so quickly and easily, yet seemed as if I had spent a lot of time and effort on them {just my kind of recipe!} This is one of my new absolute favorite go-to recipes when i’m in a pinch! <3 it & hope you do too!
