Gourmet Egg and Watercress Sandwich with Prosciutto

My husband went to a business meeting during dinner time tonight, so since it was just me and the kiddos I thought i’d whip up something simple, and have “Tea Time” instead. For a lot of English people tea time probably involves actual tea…but since my family didn’t drink tea, “tea time” was basically just a more exciting way of telling us we were having sandwiches for dinner! We always loved this though, because along with the sandwiches came biscuits (cookies) or cake after!

Spring Ratatouille with Sunny-Side Up Egg

This Spring I really wanted to attempt to make a delicious ratatouille, since it’s packed with so much fresh seasonal produce, and then I came across THIS RECIPE from an awesome food Blog I found, that paired the ratatouille with a sunny side up egg, and I was sold!

The other day my mother in law gave me a bag of Quinoa–and until this point I had never even heard of Quinoa before, let alone tasted it, or knew how to cook it. So, I went home and did a little research online to see what it was, and what it could be used for. I was pretty excited to see how healthy and protein rich it was. Then to see all the different ways it could be prepared just convinced me that Quinoa would have to be a staple ingredient in my pantry from now on!!

Today is officially the first day of Spring, but here in Mattawa you would never know it! The wind was so strong today, that by the end of it, I looked like cousin IT– and not in a cute way! But it’s all good. Bunches of Asparagus and Easter candy lined the grocery store shelves today–giving me some hope that Spring really will happen soon, and I have created the most awesome list of seasonal dishes that I can’t wait to create!

Today I thought I would get out of my ‘cooking comfort zone’ once again, and attempt something a little “challenging.” Not only is making a perfect hollandaise sauce from scratch (without it separating) a little tricky, but then you have to poach a perfect egg, whilst cooking the canadian bacon and warming the English muffin all at the same time, so that it all comes together nicely within minutes!
