Salmon Burgers with Poached Egg & Avocado Hollandaise

For some crazy reason I always cook for 6, even though only 2 of us actually eat! {My husband counts as half, because he always comes home from work barely hungry, and my 2 kids combined count as another half, because they are super picky!}  So I am often left with a lot of food, and lately I have been finding some delicious, creative ways to use it! A couple of days ago I made salmon cakes and had four left, so I decided to make salmon burgers. I actually ended up loving the burgers more than the original recipe!  I stumbled across an avocado hollandaise from foodandwine that I LOVE! It’s one of those rare recipes that I will find ways to use time and time again. It’s SO much healthier, quicker and simpler to make than a regular hollandaise, and tastes just as good! I also decided to add a poached egg… just because the hollandaise took seconds, and the patties were already made, and I was bored, and felt like getting fancy! You could add asparagus, or even just serve the burgers plain! But the combination was to die for delicious! I hope you guys enjoy.  More

Spring is finally here, and this week I have been busy spring cleaning, re-decorating, re-purposing, and generally working my butt off! I was so tired after painting for 8 hours straight on saturday that by the time it came round to making dinner, I was overwhelmed and didn’t want to do anything complicated that required exerting any kind of energy! This usually means a sandwich.. or a risotto! Ha. I know risottos aren’t usually associated with “simple” or “low-maintenance” but for me, it means I get to stand in one spot and stir and be totally and utterly lazy, and I LOVE that, especially on days like that! I decided to add smoked salmon, avocado and a poached egg, just because those flavors go so well, and they’re three of my absolute favorite things in the whole world! I pretty much created this dish for myself, and it’s definitely become one of my new fave’s! I hope you guys <3 it!

Quite some time ago I made a recipe for Oeufs Cocotte {French Baked Eggs} which was so simple and delicious, that when I came across a recipe for Mexican baked eggs on pinterest the other day, I just had to try it. I’m not a breakfast person at all, and TexMex is probably my least favorite cuisine, so I was actually really surprised by how much I loved this TexMex breakfast! Haha. Secretly, the more I make TexMex food, the more I am starting to love it, plus this dish actually made a really great dinner! The combination of melted cheese, fresh lime, and tortillas dipped in soft-eggs was just so good, I can’t wait to make this dish again, maybe even for breakfast this time!

Lemon Orzo Eggs Benedict with Asparagus and Prosciutto

The other day I made chipotle eggs benedict with asparagus and chorizo, and it. was. TERRIBLE! I think if i just ate a spoonful of cayenne powder and washed it down with some melted butter I would have saved myself a lot of time and effort! Then I started brainstorming a little and somehow came up with the GENIUS idea of serving eggs benedict on top of lemon, parmesan orzo. I threw in some asparagus, because it’s seasonal and seems to be the popular thing to do, then a slice of salty prosciutto, because let’s face it… bacon just makes everything taste better! Then topped it with a classic, delicious hollandaise sauce, and it looked a-mazing! I had pretty high expectations for it. Then one bite exceeded all those expectations, as it was one of the best things I have ever put in my mouth! In fact, I would quote bad lip-reading Edward here, and say: “it was my most bestest creation!” So everyone needs to make this recipe, pin it, share it, love it, and eat it everyday because it’s really good for you! Okay, that part’s a lie, but if it was, I would FOR SURE eat this on a daily basis!

Oeufs Cocotte {Baked Eggs}

You know those CRAZY days where you just need a really quick, simple fix for dinner? Today was one of those days. I woke up in the morning to my three year old barfing, my husband could barely talk (because he has a throat infection) and my daughter, who’s still recovering from a bad cold, is pretty darn grumpy! Then I look in the fridge and cupboards, and of course… i’m out of just about everything. Milk. Bread… I have no bananas or ginger Ale to help my sick little guy who needs to be on the BRAT diet! So I make the 55 mile trip into town with my girl and get all my grocery shopping done, then I spend the rest of my day running around trying to take care of my poor sick little family.
