Best 10 minute Tom Kha

Tom Kha is my favorite soup in the whole world, so I have been determined to master the PERFECT recipe for it for ages!! At first, I tried making several recipes without the Tom Kha paste– and I just couldn’t seem to get the level of flavor I needed. So I went to the Asian Market and stocked up on Tom Kha Paste, and have been experimenting ever since– I didn’t just want to make the recipe on the back of the jar, by adding water, which you can do! Mostly because I wanted the recipe to taste as awesome as the ones you find in good thai restaurants. I have made SO much of this stuff recently that I thought my family and I would start to get sick of it, but somehow, the more I make it, the more I LOVE it, and…. I even managed to convert my two small kiddos! They are four and five, and the pickiest eaters on the planet, but they both picked up the bowl, and drank this soup down, and made me SO happy! I’m so glad I stocked my pantry with jars of this paste, because it has become a much-loved go-to meal for my family. It’s not only super delicious, but surprisingly filling and really healthy too! AND did I mention, I can make it in under 10 minutes?! I have some precooked frozen chicken that is already cut into bite-sized pieces to make this recipe SUPER easy and fast, as well as a carton of coconut milk always sitting in my fridge! Everyone needs fast, super simple, healthy, delicious recipes like this on hand! I hope you love it and make it as much as we do!

Thai Green Curry

This week I have been making “green” and Irish foods in honor of St. Patrick’s day, which has given me the perfect excuse to finally make thai green curry! I have already found my absolute favorite recipes for yellow and red thai curries, so this was the last one I wanted to master–but it was also the hardest. I have tried green curries in the past that have been bitter, bland and watery– but I have been working hard to perfect this one, and make sure it was none of those things! It’s creamy, a little bit spicy, citrusy, salty and all around just packed full of flavor, color and texture! This is the best green curry I have ever tried, so I hope you guys love it too.

My Thai yellow curry recipe is one of my absolute favorite things on my Blog! Sadly my photos don’t do the recipe justice at all, but it is thick and creamy and flavorful and a little bit spicy, and a little bit salty, and everything a perfect thai yellow curry should be. So naturally, when I came across RED curry paste at the store the other day for the first time ever, I had to try it, and model the recipe after my yellow curry which I worked so hard to perfect. I changed up a few of the veggies {and added mushrooms, because they just make everything better}, and served it with rice noodles, but the result was still the same: thick, creamy, spicy, salty, tangy HEAVEN! I am in love with yet another curry recipe, and hope you love it too!

Thai Sweet Potato Soup

Last night I attempted to make crispy, oven-baked sweet potato fries, which were a huge, soggy fail! {If anyone has a recipe they swear by, or some tricks up their sleeves, I would love to know how to make good ones, because I have never succeeded before!} So, today I had some left-over sweet potatoes, and decided to make something simple and low-key, since my husband is away for work, and it’s just me and the kids. I decided to make a basic baked sweet potato soup, and I had just put the potatoes in the oven, when I thought of a way less boring, much more awesome idea instead: to make a thai sweet potato soup with yellow curry, coconut cream, peanut butter, lime, and all things delicious. By the time I was done I couldn’t even taste the sweet potato in it, so really I shouldn’t even call this a “sweet potato” soup… but it tasted more like a creamy massaman or yellow curry: full of spices and heat and flavor. I know this soup sounds pretty crazy… but it’s honestly one of the best soups I have ever made, so once again, you’re just going to have to trust me on this one and try it! ;-) It’s a shame my husband wasn’t here to!

Thai Yellow Curry

A few months ago my little family went out to dinner at a new thai place that opened up in tricities called Mezzo Thai Fusion. I’m pretty laid back, and really easy to please, but the service in this place was some of the worst we have EVER experienced! We waited an hour to get our starter {which is NO fun when you have two small, bored kids in tow}! When it came out it was burnt and bitter, and the peanut sauce had separated. They brought the kids dinner out a little over an hour and 15 minutes, and they only brought out one! :-/ I told them we didn’t need the other. Then they brought out my husband’s green curry and it was so watery and gross I had to force myself to swallow the bite I tried! As you can imagine after all of that, I didn’t have very high expectations for my yellow curry, but they brought it out and it was to die for delicious! AMAZING! One of the best curries I have ever had in my entire life, to the point that I was tempted to drive the 55 miles back into town the next day, just so I could order it again {to take away!} P.S. They brought us the cheque, and then as we got up to leave, the second kids meal came out! Haha. I have to laugh at it now. It’s a shame that I don’t think that restaurant will be open for long! :-( Then again… that yellow curry alone could keep them in business for years to come, so I guess we’ll see!
