Crispy Shrimp Tacos with Avocado Ranch Lime Dressing

I have been excited to share this recipe for a while now! I made these crispy shrimp tacos this summer on a whim without writing down the recipe or taking any pictures. Maybe because I didn’t have very high expectations, or was feeling a little burnt out with blogging and was kinda busy– but as soon as I tasted them, I instantly regretted it. Not only were these tacos the BEST I have ever made {which doesn’t tell you a whole lot, because I really haven’t made very many!} But they are some of the best I have ever tasted, ever!! The ranch avocado lime dressing is so thick and rich and creamy–that it doesn’t taste healthy at all! Even though it really is! The shrimp are crunchy and perfect, and the coleslaw… I could eat by itself for days! It has the perfect combination of heat, saltiness, sweetness and acidity. I am in love with this recipe–I think it’s one of the best I have posted yet! So I hope you guys all love it too!

Mother in Law’s Chicken Posole

My mother in law makes the most amazing soups, and my absolute fave. is her Chicken Posole, so this week I asked her if we could make some together– {and by this, I mean, she makes it, while I write down the recipe!} ;-) “We” made a large batch to fill my freezer, but it’s also a GREAT recipe to feed a crowd {which is another one of my mother-in-law’s fortes!} This recipe is not only super delicious, but is so quick, simple and inexpensive to make, and can be adapted in so many different ways. We added the peppers as a garnish at the end, to make the soup “kid-friendly.” You can also add sour cream, sliced radish, Pork, cabbage, fried corn tortillas, lime and cilantro to change it up according to individual tastes! I’ll have to keep this recipe close by for when I have a lot of hungry people to feed! Thanks so much to my amazing mother in law for sharing another one of her delicious recipes!

Cafe Rio Style Chicken Tortilla Soup

The other day I came across a recipe for Cafe Rio’s Chicken Tortilla Soup, and just had to try it! When I lived in Orem, Utah – where cafe rio was right around the corner – my husband and I used to go ALL the time, and order the same thing over and over, but I thought it would be fun to try something new… and make it myself, since we can’t go there whenever we want any more! :-( I was expecting this to be delicious… it is cafe rio! But what I wasn’t expecting, was for this recipe to become my new favorite soup of ALL TIME! I am absolutely LOVING this recipe, and can’t get enough of it! So as usual, I hope you guys love it too!!!

Chipotle Lime Fish Tacos

The other night I made some delicious fried chicken and coleslaw, and since I had a lot of the coleslaw left-over, I decided to use it to make some yummy fish tacos. When my husband and I were freshmen at BYU, we went to Betos with our best friend, Brandon {this cheap Mexican joint, that was SUPER dodgy, but extremely popular}, and Brandon somehow convinced me to get the fish tacos! I had never had one before, but he said they were so good they’d pretty much change my life, so I went for it… and they were GROSS. The taste and smell of fish lingered with me for days after, and made me feel really sick. Then last summer I felt brave and made some fish tacos at home…. and the smell lingered in my house for days, and again– just made me feel pretty sick! Honestly, I don’t know what convinced me to try fish tacos again, but just because they seem to be a classic summer dish, and something that’s kinda healthy that I could whip up in minutes, I decided to give them another shot. It must be three times lucky, because finally I found a delicious fish taco recipe that even I would eat! The list of ingredients is ridiculously long, but if you have some left-over coleslaw, or even make it ahead of time, you can whip up these fish tacos in 15 minutes! They’re colorful and pretty, pretty-healthy, and full of flavor! I need to invite my friend Brandon to dinner! ;-)

The other week my husbands friends at the office made an authentic Mexican Aguachile recipe, which he couldn’t stop raving about for days! He came home and told me: “I have something for you to make” then went on to describe this raw shrimp and lime dish with chiles, tostadas and mayo, and to be honest, I was a little freaked out! I didn’t really want to make it, but then when father’s day rolled around and I brainstormed all of my husbands favorite dishes, I knew he would love this one the best. So I called my friend, Patty at the office and asked her for her recipe, and she was REALLY kind to explain in depth how to make it, serve it and eat it, because I was totally lost, and out of my comfort zone! This is the FIRST authentic Mexican dish I have ever made, and posted on my blog, but definitely not my last! It turned out to be so fresh, flavorful and delicious– that I could see what my husband was raving about, and it turned out so great, that it definitely made his day today!
