Those of you who know me, or have followed my blog for some time, are aware of two of my addictions– 1. To Carrabba’s Italian Grill and 2. To cooking risottos– so it was only natural for me to create this Carrabba’s style Chicken Bryan Risotto. Their Chicken Bryan is their most popular chicken dish–with a lemon butter sauce, goat’s cheese and sundried tomatoes on top, it has the perfect combination of tangy, tart, salty, sweet and citrusy! It’s divine. I decided to make my absolute favorite, creamy, cheesy heavenly risotto recipe, and combine the Chicken Bryan with it into one DELICIOUS dish. I was imagining it to be pretty spectacular, but, it turned out even better than i’d hoped! It’s rich, creamy and cheesy with the perfect balance of sweet, and tart and salty! I know it’s quite a bit of work, but it’s oh so worth it!

A couple of years ago I posted a simplified recipe for Bonefish Grill’s Bang Bang Shrimp, which quickly became one of my most popular dishes! The restaurant serves bang bang shrimp on top of a bed of lettuce as its most famous starter, and also serves it in warm delicious tacos as a main dish–but this week I decided to change up the recipe a little, and serve it with the next best thing… pasta! My husband said this reminded him of a diablo shrimp recipe. I’m not usually one for really spicy food, but this is to die for delicious! I hope you guys love it as much as the first recipe, if not more!

Spring is finally here, and this week I have been busy spring cleaning, re-decorating, re-purposing, and generally working my butt off! I was so tired after painting for 8 hours straight on saturday that by the time it came round to making dinner, I was overwhelmed and didn’t want to do anything complicated that required exerting any kind of energy! This usually means a sandwich.. or a risotto! Ha. I know risottos aren’t usually associated with “simple” or “low-maintenance” but for me, it means I get to stand in one spot and stir and be totally and utterly lazy, and I LOVE that, especially on days like that! I decided to add smoked salmon, avocado and a poached egg, just because those flavors go so well, and they’re three of my absolute favorite things in the whole world! I pretty much created this dish for myself, and it’s definitely become one of my new fave’s! I hope you guys <3 it!

A little while ago I got brave and made a Pad Thai Risotto which turned out to be one of my favorite dishes of all time! It sounded so crazy, I was actually really reluctant to try it, but when I did, it completely blew me away! So then recently, I thought: “why not try a Chicken Tikka Masala Risotto?” I love the flavors of Chicken Tikka Masala {it’s also one of my most favorite dishes on earth!} And I love the texture of a thick, creamy, dreamy risotto–so combined, it had to be a win-win! And it really was! I think I love this dish even more than the pad thai risotto! I know there are a lot of ingredients, but it’s so simple to make, and it’s SO worth it!
