French Onion Soup

My father in law grows potatoes and onions for a living, and lets us have as many as we want for free, which is awesome! I have made a lot of recipes using his potatoes, but I don’t ever use his onions– probably because there aren’t very many main courses or even side dishes that use onions as a main ingredient. So, I thought I would learn how to rock a french onion soup! It would be a really inexpensive and delicious meal for us… [if my husband actually liked french onion soup!] He was at his Grandparents house fixing their computer and told them he’s never had a good french onion soup before, and isn’t really a fan. Then his Grandmother said: “I haven’t ever had a good french onion soup either! Good luck!” Then last minute, a couple of friends stopped in for dinner, and said: “French onion soup? What is that? I have never even tried it before.” So, I was pretty worried I had spent an hour and a half making something that everyone was going to hate! Our friends even brought a pizza as a back up plan (and something for the kiddos to eat).

Can you tell i’m getting super antsy for spring and summer to arrive?! First of all, I started my Spring cleaning three months early, and now i’m making summery salads in mid-january! What is going on here?! To be honest, I think i’m just ready for warm, fun days outside, to stop eating heavy wintry foods, and to just let my toes be free! okay, there’s something really wrong with talking about my cheesy feet on the food segment of my Blog, or at all, actually. So we’ll move on quickly.

This evening we had an etiquette night for the youth in my ward with a three course meal. Luckily I didn’t have to prepare all of it, but I was assigned to do the soup, and I had a great one in mind! This recipe comes from one of my favourite cook books ever (Lion house classics) and it’s so simple and delicious that I just had to share it. It also got mad reviews from everyone I served it to.

Eggs Benedict

Today I thought I would get out of my ‘cooking comfort zone’ once again, and attempt something a little “challenging.” Not only is making a perfect hollandaise sauce from scratch (without it separating) a little tricky, but then you have to poach a perfect egg, whilst cooking the canadian bacon and warming the English muffin all at the same time, so that it all comes together nicely within minutes!
