Lemon Orzo Eggs Benedict with Asparagus and Prosciutto

The other day I made chipotle eggs benedict with asparagus and chorizo, and it. was. TERRIBLE! I think if i just ate a spoonful of cayenne powder and washed it down with some melted butter I would have saved myself a lot of time and effort! Then I started brainstorming a little and somehow came up with the GENIUS idea of serving eggs benedict on top of lemon, parmesan orzo. I threw in some asparagus, because it’s seasonal and seems to be the popular thing to do, then a slice of salty prosciutto, because let’s face it… bacon just makes everything taste better! Then topped it with a classic, delicious hollandaise sauce, and it looked a-mazing! I had pretty high expectations for it. Then one bite exceeded all those expectations, as it was one of the best things I have ever put in my mouth! In fact, I would quote bad lip-reading Edward here, and say: “it was my most bestest creation!” So everyone needs to make this recipe, pin it, share it, love it, and eat it everyday because it’s really good for you! Okay, that part’s a lie, but if it was, I would FOR SURE eat this on a daily basis!

Brie Stuffed Pears

One of my husband’s all time favorite things is Bris so I thought i’d whip him up these bris stuffed pears for lunch the other day (and by the other day I mean this time last week, because I am really behind… again! :-/ Which may account for some “mass posting today.”) I was feeling kind of bold and daring and thought i’d see how they tasted with prosciutto and I found out–NOT very good at ALL! I almost didn’t post this recipe because of that, but the bris stuffed pears themselves were SO spot on and delicious, I couldn’t resist. I mean, who could resist honey brushed pears filled with melted bris cheese, topped with caramelized hazelnuts? These are SO yummy!

Mother in Law’s AMAZING Cheese Fondu

My mother in law makes the BEST cheese fondu ever! It also happens to be one of my husband’s most favorite things in the whole world, so really, I have NO idea why I haven’t blogged this recipe sooner! I have tried a couple of different variations of cheese fondu in the past, but this recipe is just so spot on, that it’s pretty impossible to beat. It’s thick, smooth, creamy and cheesy, it’s seasoned perfectly–but best of all, it won’t separate {no matter how long you leave it in your pan/fondu maker}. She got the recipe from a restaurant she worked for years ago, but she’s never followed a written recipe for it, so we kind of made one up together. (P.S. Don’t you just envy those people who can throw ingredients together without following instructions and come up with something so perfect every time?) Yep. That’s her.

Oeufs Cocotte {Baked Eggs}

You know those CRAZY days where you just need a really quick, simple fix for dinner? Today was one of those days. I woke up in the morning to my three year old barfing, my husband could barely talk (because he has a throat infection) and my daughter, who’s still recovering from a bad cold, is pretty darn grumpy! Then I look in the fridge and cupboards, and of course… i’m out of just about everything. Milk. Bread… I have no bananas or ginger Ale to help my sick little guy who needs to be on the BRAT diet! So I make the 55 mile trip into town with my girl and get all my grocery shopping done, then I spend the rest of my day running around trying to take care of my poor sick little family.
