Chicken Tortilla Soup

Today was a BAD day! I won’t go into details, because it’s a bit weird to talk about potty training on the food segment of my Blog… but that’s what I was doing today for my 19 month old daughter. She has been asking to use the potty for weeks now, and on the day I decide to finally train her, she gets scared, and even refuses to drink all the juice and soda I got for her….as if she knows my evil plan! So there I am, trying to keep an eagle eye on her… meanwhile, my three year old son is painting my bathroom with my bare minerals. When you add water to that stuff, it turns to a nice colorful paste… so you can imagine all the pretty colors my white bathroom became! So if I turned my back on my three year old, he was naughty….and if I turned my back on my potty training 19 month old, there were accidents, so I just couldn’t win. It was a long, stressful day with not a whole lot to show for it! So, as you can imagine- I really didn’t want to put a whole lot of effort into dinner.

French Onion Soup

My father in law grows potatoes and onions for a living, and lets us have as many as we want for free, which is awesome! I have made a lot of recipes using his potatoes, but I don’t ever use his onions– probably because there aren’t very many main courses or even side dishes that use onions as a main ingredient. So, I thought I would learn how to rock a french onion soup! It would be a really inexpensive and delicious meal for us… [if my husband actually liked french onion soup!] He was at his Grandparents house fixing their computer and told them he’s never had a good french onion soup before, and isn’t really a fan. Then his Grandmother said: “I haven’t ever had a good french onion soup either! Good luck!” Then last minute, a couple of friends stopped in for dinner, and said: “French onion soup? What is that? I have never even tried it before.” So, I was pretty worried I had spent an hour and a half making something that everyone was going to hate! Our friends even brought a pizza as a back up plan (and something for the kiddos to eat).

This evening we had an etiquette night for the youth in my ward with a three course meal. Luckily I didn’t have to prepare all of it, but I was assigned to do the soup, and I had a great one in mind! This recipe comes from one of my favourite cook books ever (Lion house classics) and it’s so simple and delicious that I just had to share it. It also got mad reviews from everyone I served it to.

Back in the day when my husband and I were care-free, kid-free and lived close by to things like restaurants, we ate out a lot! We would take off on his motorbike, see some beautiful sights–and end up at some random little restaurant. One of my favourite places to go was the Olive Garden- because i’m pretty much obsessed with pasta, and their soups and salads are so good!

I have this “thing” where I don’t make the same recipe twice unless I am totally in LOVE with it, and this is one of those recipes that I make on a regular basis. I thought I would share it- because I just think soup and rolls make a perfect autumn dinner- and this is the EASIEST and most delicious soup ever.
