Cream of Snap Pea Soup with Mint and Lemon

In honor of St. Patrick’s day this weekend, I thought I would theme my recipes with GREEN for the week! (I’m LDS and don’t drink beer, so we have to get creative with “celebrating” St. Patty’s in our own unique ways)! There are few foods as green as split pea soup so I thought i’d have a go at making my very first one, but I didn’t want it to be just ‘any-old,’ boring, bland pea soup — instead I thought I would try snap peas with a hint of lemon and mint, and of course some heavy whipping cream for good measure. This soup is absolutely delicious, and not only is it perfect for St. Patrick’s with its bright green colour and cute 4-leaf clover, but it’s also the perfect meal for Spring–which officially starts a week from today! I LOVE this time of year, and to be honest, I am really anticipating the change from cooking winter comfort classics to more healthy, fresh, spring-time cooking! When I was at BYU (my university in Utah) my husband, who I was just dating at the time, was sharing an apartment with his best friend/cousin Brandon, who had been living in Russia for the past couple of years serving a church mission. {Wow, that was a lot of background information crammed in one sentence! I wasn’t an English minor for nothing y’know!} ;-) One night Brandon wanted to make us one of his favorite dishes from Russia: “Borscht.” I can’t remember if he made it with the help of my husband or not, but either way, they both knew what was in the soup and I didn’t, so when it came out blood red with floating bits of meat in it… you can only imagine how disturbed and reluctant I was, to eat it. Brandon wouldn’t tell me what was in it until I had taken a bite, and after I had that bite… he told me it was blood. I wanted to CRY! {I was so gullible back in those days!} Not now of course. Ahem.

My mother and father in law just gave me the most AWESOME new kitchen toy for christmas this year, and I have been dying to try it out ever since! The Vitamix is a kitchen appliance used by professional chefs, and by companies like Jumba Juice to make just about anything! It chops, purees & creams, blends, cleans-itself, heats, cools and more. To be honest, it’s a little bit intimidating because it is so intense, and has so many capabilities, so I decided to start out with something really basic and simple–this shrimp and crab bisque.

Cream of Portabello Mushroom Soup

I am so behind on my posts it’s crazy! Amongst taking wedding photos and senior portraits this weekend (which I can’t wait to post, because they’re some of the best photos i’ve ever taken!) I also have a few amazing recipes I want to share, as well as my sons cute bedroom re-do. I’m trying to get my house together before my Mum and sister come to stay (from England) next saturday. I’m also taking a couple of camera classes right now, and learning manual mode (and I can’t WAIT to share what I have learned there!) We have our family pictures this weekend, and Disney on ice! (Yay!) And basically, all kinds of things happening. I can’t stress how crazy I have made my life this week, and my husband is leaving me alone while he goes on three business trips back to back to Las Vegas, California and Chicago! I just hope you will bear with me while I try really hard to play catch up a little bit!
