Thai Sweet Potato Soup

Last night I attempted to make crispy, oven-baked sweet potato fries, which were a huge, soggy fail! {If anyone has a recipe they swear by, or some tricks up their sleeves, I would love to know how to make good ones, because I have never succeeded before!} So, today I had some left-over sweet potatoes, and decided to make something simple and low-key, since my husband is away for work, and it’s just me and the kids. I decided to make a basic baked sweet potato soup, and I had just put the potatoes in the oven, when I thought of a way less boring, much more awesome idea instead: to make a thai sweet potato soup with yellow curry, coconut cream, peanut butter, lime, and all things delicious. By the time I was done I couldn’t even taste the sweet potato in it, so really I shouldn’t even call this a “sweet potato” soup… but it tasted more like a creamy massaman or yellow curry: full of spices and heat and flavor. I know this soup sounds pretty crazy… but it’s honestly one of the best soups I have ever made, so once again, you’re just going to have to trust me on this one and try it! ;-) It’s a shame my husband wasn’t here to!

One of my absolutely favorite things to eat this fall, which I just cant seem to get enough of, is white chicken chili. The first time I ever made and even tasted it, was on our sailing trip to the puget sound at the end of the summer. We warmed up a bowl and topped it off with some fresh cilantro, lime, creamy avocado and tons of melted cheese, and it just really hit the spot, and warmed us all up as we cozied up under blankets up on deck.

Roasted Cauliflower Soup with Mushroom, Bacon & Cheddar Puff Pies

Is it just me, or has the world become cauliflower-obsessed lately? All over pinterest are recipes for: Cauliflower pizza crusts, cauliflower alfredo sauces, seasoned cauliflower bites, cauliflower popcorn {i’m not even kidding!} Cauliflower tater tots {i’m not kidding again!} Cauliflower buffalo wings! Cauliflower wraps, salads and casseroles, and about a million other recipes. I don’t know if it’s a recent “trend” or if i’ve just had a sheltered English upbringing where the only good recipe that called for cauliflower, was good old “cauliflower cheese” {which I think my mum made on a weekly basis!} But either way, I recently realized that I should be making more cauliflower recipes! {And by “more”, I mean “one.” I think this is the first recipe I have posted with cauliflower as an ingredient!}

Raspberry Gazpacho with Nectarine & Pistachio Crostini

Last summer I found a recipe for a strawberry gazpacho which was unexpectedly delicious, super elegant and healthy, and so simple to make! So this year I thought I would create a similar recipe using my all time favorite type of berry, and pair it with some yummy, seasonal nectarines on crostini. To be honest, this version tasted pretty darn similar to the other one, but ended up being SO much easier to make, because I didn’t have to hull and chop 6 cups of strawberries! I know a gazpacho might sound, and even look “fancy” but truly, it was one of the simplest, quickest things I have made in a really long time! It’s also one of the healthiest things I have made in a really long time– as it’s packed with berries, whole grains, and vegetables! So of course I had to pair it with some good ol’ carbs, salty pistachios and sweet fruit. This meal ended up being really fun to make, really pretty to look at, and of course, really yummy to eat! Cream of Artichoke Soup with Frico Bowls

Since artichokes are in season right now, I thought I would make a delicious cream of artichoke soup topped with pretty parmesan frico salad bowls. I have never tried an artichoke soup in my life, so I had NO clue if it would be any good– but I knew anything with the combination of artichoke hearts, mascarpone, and parmesan could hardly be bad! P.S. whenever the word “mascarpone” comes up in the Christensen house, everyone has to start yelling it out with the worst Italian accents you’ve ever heard “Its-a-mascarponay!” It only started because most of them speak Spanish, so they can’t pronounce Mexican dishes like most normal Americans do! Haha. So, now we just pronounce all kinds of things in really crazy ways. Oh wait, i’m English–so I do that anyway I guess! Anyway, I was really surprised at how delicious this soup was, and the frico bowls were SO simple, and so pretty, I just want to top every soup with them! Here are the recipes! Enjoy!
