Spring is finally here in Mattawa! Hooray! It’s sunny and warm and bright, and life is good! Perfect Potato Soup with Watercress & Prosciutto

My husband’s family are potato farmers out here in Mattawa, Washington, and because I can get as many as I like for free, I know I should cook with them much more often! I always have a huge box sitting in my pantry waiting to be used, so on the days when I don’t have something planned for dinner, I always seem to turn to this delicious potato soup recipe! It’s so flavorful and healthy by itself, but just like a baked potato, you can add so many different garnishes and toppings to it, that it’s sure to please everyone: watercress and prosciutto are my fave’s, my hubby loves spicy hot sauce, and the kids love cheese! I think that’s why this has become one of my favorite go-to family recipes, because it can be adapted so easily to please everyone! What toppings would you add?

Mother in Law’s Chicken Posole

My mother in law makes the most amazing soups, and my absolute fave. is her Chicken Posole, so this week I asked her if we could make some together– {and by this, I mean, she makes it, while I write down the recipe!} ;-) “We” made a large batch to fill my freezer, but it’s also a GREAT recipe to feed a crowd {which is another one of my mother-in-law’s fortes!} This recipe is not only super delicious, but is so quick, simple and inexpensive to make, and can be adapted in so many different ways. We added the peppers as a garnish at the end, to make the soup “kid-friendly.” You can also add sour cream, sliced radish, Pork, cabbage, fried corn tortillas, lime and cilantro to change it up according to individual tastes! I’ll have to keep this recipe close by for when I have a lot of hungry people to feed! Thanks so much to my amazing mother in law for sharing another one of her delicious recipes!

Cafe Rio Style Chicken Tortilla Soup

The other day I came across a recipe for Cafe Rio’s Chicken Tortilla Soup, and just had to try it! When I lived in Orem, Utah – where cafe rio was right around the corner – my husband and I used to go ALL the time, and order the same thing over and over, but I thought it would be fun to try something new… and make it myself, since we can’t go there whenever we want any more! :-( I was expecting this to be delicious… it is cafe rio! But what I wasn’t expecting, was for this recipe to become my new favorite soup of ALL TIME! I am absolutely LOVING this recipe, and can’t get enough of it! So as usual, I hope you guys love it too!!!
