Salmon Burgers with Poached Egg & Avocado Hollandaise

For some crazy reason I always cook for 6, even though only 2 of us actually eat! {My husband counts as half, because he always comes home from work barely hungry, and my 2 kids combined count as another half, because they are super picky!}  So I am often left with a lot of food, and lately I have been finding some delicious, creative ways to use it! A couple of days ago I made salmon cakes and had four left, so I decided to make salmon burgers. I actually ended up loving the burgers more than the original recipe!  I stumbled across an avocado hollandaise from foodandwine that I LOVE! It’s one of those rare recipes that I will find ways to use time and time again. It’s SO much healthier, quicker and simpler to make than a regular hollandaise, and tastes just as good! I also decided to add a poached egg… just because the hollandaise took seconds, and the patties were already made, and I was bored, and felt like getting fancy! You could add asparagus, or even just serve the burgers plain! But the combination was to die for delicious! I hope you guys enjoy.  More

The other day I made a delicious Stuffed Tepanade Roast Lamb, and had a LOT left over, so I decided to make a tepanade lamb grilled cheese! It was SO heavenly I decided to post up the recipe– even if I do feel silly for giving directions for something SO simple, it’s always good to get ideas for creative left-overs. I love the feeling of whipping up something so “fancy” and delicious within a couple of minutes!

Crab Cake Sliders with Sweet Mayo

Last year I made crab cakes for the first time ever, by cooking and de-shelling a dungeness crab. It was a lengthy, tedious, not-very-fun process which resulted in a small handful of crab meat; and even though they were the BEST crab cakes I had ever eaten in my life, I haven’t made them since because they were just too much work! {..Aaand the crab was kinda freaky and I didn’t like touching him}. So, this time I decided to get smart and use some canned lump crab meat, which was actually the same price, if not cheaper than getting it out of a store-brought dungeness crab! I made the same exact delicious crab-cake recipe as before, but this time put them in burger buns with avocado and sweet mayo, and they were HEAVENLY!! And SO much easier that i’ll definitely be inclined to make them again {and again!} They kinda fell apart on me during cooking, because I didn’t have time to refrigerate the patties, but even so, they looked and tasted just as amazing! If you have lots left over, like we did, you can also use the crab cakes for a salad, in a crab-melt or panini, crab eggs benedict, or just have more sliders again the next day. I got 2 or 3 gourmet meals out of one can of lump crab-meat, which means this recipe isn’t just awesome, but pretty economical too!

My husband loves buffalo chicken, and burgers, so this buffalo chicken burger was definitely one for him! He’s not really a fan of blue cheese so instead I decided to top the burgers with melted cheddar and some ranch coleslaw, which made it extra delicious! I hope you guys enjoy!

The “only” Reben

Reuben’s are my husband’s all time favorite sandwiches, and since today he wasn’t feeling too well, I thought i’d whip one up for him! (My three year old son is also really sick, so it was actually nice to whip up something SUPER quick and easy for dinner tonight). My hubby is kind of picky, and when it comes to Reuben’s there’s only ONE way to make them–so this recipe uses pastrami (instead of corned beef) and habenero mustard instead of thousand island dressing, but it actually turned out pretty darn delicious! Reuben’s just might be making my top list of favorite sandwiches now too.
