BBQ Chicken Quinoa Bowls

Lately I have noticed a trend in “bowls” of food, served up in pretty sections, with quinoa as a main ingredient — probably because it’s so darn healthy… {and because it goes with everything, like a pretty black dress}. I have had a hard time making quinoa taste good in the past, so I haven’t experimented with it as much as I should have, but I thought it would be delicious in a CPK style BBQ chopped chicken salad, arranged prettily in “bowls.” If you make everything from scratch this salad is holy smokes AMAZING! But it’s also super delicious with store brought BBQ and ranch which saves a LOT of time, effort, work and money for buying all those ingredients! This is one of my new favorite dishes, and I love how {mostly} healthy it is too! I hope you guys like it!

Chicken & Orzo Summer Salad

In one month it will be the end of summer–and we’re cramming SO MUCH into it, that I just know it’s going to fly by! This week we’re going to sail to the San Juan islands with my in-laws, and hopefully see some beautiful orca whales! When we get home we travel to GREECE just a few days later to see my sister get married in the beautiful island of Skiathos, and tour Athens a little. The day after we get back my little guy, Braden starts going to preschool every day! My husband turns the big 3.0, and hopefully he’ll also get his pilot’s license! I won’t have time to blog many more summer recipes before the end of the season, but I really wanted to squeeze this one in! I have been making a LOT of salads lately, probably due to the pressure of fitting into my bridesmaids dress AND spending a week on the beach! And this salad is one of my all time favorites!! Ok. So it’s not the healthiest, but it has a LOT of really good stuff in it so you can feel good about eating it, and it’s so flavorful because, just like the rest of my summer, it has a lot going on in it! CPK Style BBQ Chicken Chopped Salad

One of my all-time favorite salads is the BBQ Chicken chopped salad from CPK–so yesterday I thought i’d learn how to make one just like it. I had NO idea at the time how many components went into a salad like this: the chicken, the home-made BBQ sauce, the home made garden herb ranch dressing, the salad itself, and the baked tortilla strips… I was also making some sticky rice for a mango and sticky rice dessert so there was a lot going on in my kitchen yesterday evening {and I may have made quite the mess to prove it!} :-/ Usually if a recipe is too complicated or too much work, I don’t want to make it again so I don’t post it… but this salad was one of the BEST salads I have ever eaten, so all the work was way worthwhile! Plus it can be easily adapted with store-brought BBQ and ranch to whip up in minutes, and it keeps so well that it tastes just as good and fresh the next day.

Winter Citrus Salad with Pistachios, Goat Cheese & Blackberries

My husband has been out of town for a few days on a gun course in Nevada with his Dad and brothers, so for the last few days I have had fun making “girl food” like this meatless-salad, full of berries and citrus and all things healthy. I love fruit and vegetables of every kind, but what surprises me is how much my kids do! On friday we had a girls night with kinect dancing games and a HUGE chocolate cake which was to-die-for delicious, and when I offered some to my 2 year old girl, she said she’d rather have an orange. I mean, I do love fruit, but i’m not healthy enough to choose it over chocolate! So, I am VERY impressed, and very blessed to have such healthy kiddos {and take no credit for that whatsoever}! When I was making this salad, it was fun to give them handfuls of blackberries (which they love even more than candy, i’m not kidding!) And Cara Cara oranges which my girl loves, because she thinks they’re “pink!”

Wild Rice Salad with Apples, Cranberries and Toasted Pecans

I have wanted to learn how to make wild rice for a while now because it just looks so darn cool, and is just “different” to the boring white stuff I always serve…but I have been a little intimidated by it. I haven’t really ever eaten wild rice before, so I wasn’t entirely sure how it should be prepared, or how it should be served, or even what it should be served with. But then I found a recipe for a wild rice salad from foodess.com which made it look so simple, seasonal and elegant, that I was really excited to try it. More
