Traditional English Roast Beef Dinner with Yorkshires

My first ever roast!! Growing up, my Mum would make the most AMAZING Roast dinners every sunday after church. Looking back, I don’t know how she did it… every plate was piled high with food, and there were nine members of my family plus my parent’s friends, my friends, my brothers and sisters friends…it soon added up to about 20 people, and it was a loud, crazy happy place to be! I miss being with all my English friends and family, and I miss my mum’s English roasts, which is why I have decided to learn how to make them! (That, and plan a trip to England this summer!)

Butternut Squash and Pumpkin Soup

Last night I made delicious butternut squash soup in pumpkin bowls and it looked so pretty and tasted so amazing, I just had to share the recipe! I found it on the Food Network, and read all of the comments and reviews from people saying how amazing it was- and they were all right! This was one of the best soups i’ve ever had…. and was so perfect and so comforting for a cold autumn evening!

Today I thought I would get out of my ‘cooking comfort zone’ once again, and attempt something a little “challenging.” Not only is making a perfect hollandaise sauce from scratch (without it separating) a little tricky, but then you have to poach a perfect egg, whilst cooking the canadian bacon and warming the English muffin all at the same time, so that it all comes together nicely within minutes!

Sunday Dinner: Beef Wellington

Sunday lunches at my house usually consist of a cheese quesadilla or frozen chicken nuggets, because after three hours of church, my babies are tired and hungry and pretty darn grumpy… so I need to get them fed ASAP and down for naps! Then the husband comes home from his meetings-raiding the cupboards and fridge, and usually makes himself some kind of microwaved tortilla covered in ketchup and cheese, (which makes me feel like the worst house-wife in the world) and teases me relentlessly about how I didn’t save him any lunch! (As if he’d feel loved eating a plate of cold chicken nuggets?!)
