Graduation Themed Funfetti Cupcakes

 

My little guy graduated from preschool last week, and a few of the mums got together to throw a fun little party at the park to celebrate the end of the kids first school year, and the beginning of their first ever summer holiday! We brought bubbles, water guns and water balloons, and they had fun running around like CRAZY as most 5 year olds do. I volunteered to bring all the kids a treat–and in asking Braden what he wanted, he didn’t hesitate to tell me “funfetti cupcakes” which are his favorite. After decorating them with sprinkles, they were so boring, I decided to make these little scrolls and caps to go on them, at the very last minute. I KNOW!! I am one of those annoying “pinterest mums” that over-does everything and makes other mums feel bad! :-( I didn’t want to be that cliche, but I did want the kids to LOVE their cupcakes, and they really did, so it was all worth it. They were fun to make, and were the hit of the party… not just with our little graduates, but with the Mum’s {I just didn’t dare tell them how much butter was in them!} ;-) I used the Cake Boss’ vanilla frosting recipe, which is my all time fave. And I thought I would post the recipe/idea along for all you other overachieving, pinterest mums out there, that live to put a smile on their kiddos faces!

Tomorrow my son is having a fun pre-school christmas pajama party, so I signed up to bring some cute christmas cupcakes. My son {and most kids} LOVE jelly beans, so I thought I would make a jelly bean christmas wreath with some edible glitter, and a “P” for peace. They were SO EASY and fun to make that I thought I would pass on a quick how-to! I hope you like them!

Polar Bear Cupcakes

For some reason Christmas has been really overwhelming and stressful for me this year, and I am not on my game at all! Our Christmas cards never got sent, {or even made!} The christmas gifts I ordered for friends and family still haven’t arrived and will be really late! The awesome christmassy recipes I had in mind never got made or posted, and I haven’t even baked a single thing for my friends and neighbors! It wouldn’t be quite as big of a deal if everyone else around me wasn’t 1000% on their game! Friends and neighbors have come by to deliver desserts and goodies to my family and I, we’ve received tons of beautiful christmas cards, and gifts from family members {early!} I feel the love, but at the same time, I feel totally put to shame!! So today I finally decided, amidst the chaos of trying to find my passport for our trip to Victoria, planning my 8th wedding anniversary, wrapping gifts, tidying my house, doing laundry and school and dance runs, to make some cute christmassy cupcakes for my friends and neighbors! As a perfectionist, I die a little inside every time I have to do something sub-par because I spread myself so thinly, which is why I came up with the FASTEST, EASIEST, cupcakes I could think of, that would turn out super cute with next to no effort! I got out my boxed cake mix, and frosting from a container! GASP! {I know, feel free to totally judge me here, I am even judging myself!} And had a lot of fun making these cute cupcakes for my friends and neighbors in return for their kindness! YES! One thing checked off my list, and only six days to go! :-/ {Sometimes I just wish I could be a man at christmas}. Here’s how for all you crazy-busy, last-minute mommas-like-me, out there!

White Chocolate & Marshmallow Filled Cupcakes with Fondant Rose Tutorial

Isn’t it funny how us women crave quiet moments and downtime, then as soon as they come, we don’t know what to do with ourselves? I had one of those moments yesterday afternoon when my two small kiddos went down for their afternoon naps, and out of the blue, I decided: “i’m going to learn how to make fondant roses!” I know that’s weird. I probably should have just kicked my feet up, opened a bar of chocolate and turned on an episode  of ‘The Bachelor,’ but I was just in the mood to bake, and there was a whole batch of marshmallow fondant sitting in my fridge, staring at me!

Gemma’s 2nd Yo Gabba Gabba Birthday Party

This weekend was my little girls 2nd birthday! I have been planning her party for the last couple of weeks with the help of her big brother, Braden. He told me: “Gemma would like a princess Rapunzel party with pink balloons and a princess cake.” It’s so sweet how well he knows her, and how thoughtful he was too… but she was adamant that she got a Yo Gabba Gabba party instead. I even tried to talk her out of it, because my sons first birthday party was Yo Gabba Gabba themed too!!
