The BEST PB Choc Chip Cookies

A few weeks ago my friend Patty brought me the Cake Boss {Buddy Valasto’s} Cookbook, and I have loved everything I have made from it so far! I made a batch of his peanut butter chocolate chip cookies for my kids and babysitter the other night when my husband and I went on a date to watch the new man of steel movie (which was awesome!) And my kids have not stopped raving about them since! {My son Braden who’s 4 is the biggest cookie-dough fiend I know!} So today I decided to make some more. Since this recipe is a new family fave and i’m sure I will be referring to it a lot, I decided to write it up: I didn’t change the ingredients, but I re-wrote the directions to make them a lot simpler and shorter. Instead of rolling them out into a log shape and cutting them (which took a whole page to explain) I decided to just make 1/4 cup, big, soft ones and change up the cooking temperatures and times. These are by far the best PB chocolate chip cookies I have ever had! I LOVE this recipe! I know you guys will too!

Valentines Sugar Cookies with Royal Icing

This valentines I thought I would learn how to decorate delicious sugar cookies with a more-professional-looking royal icing technique rather than the regular frosting I usually slather on my cookies in a hurry. Usually I can get my baking to either look good, OR taste good–but I can never quite manage the art of both, so this time I was determined. I usually don’t do a whole lot for valentines, because my little guy was born on it, and I am usually making birthday cakes, and putting up balloons and birthday decorations, but since we’re still a week away, not only do I have the time to learn how to decorate beautiful valentines cookies… but I am still in time to teach you how to do it too! (Beginner to beginner!) I used the LionHouse sugar cookie recipe to make sure they tasted amazing, and kept with a really simple pink and white lace theme, which couldn’t have been easier for my first ever attempt at piping with royal icing! So here are a couple of recipes and tips that might come in handy this valentines:

BEST Chocolate Fudge Cookies ever

Chocolate fudge cookies are probably my favorite type of cookie in the whole world! When my husband and I lived in Utah we would go to Einsteins Bagels for lunch every now and then, and their chocolate fudge cookies were amazingly perfect! I have tried a few different recipes in the past to try and re-create ones that were as heavenly as those, but haven’t had any luck. Then a little while ago I found the idea on pinterest to use a box of fudge brownies to make them, and when I tried it out, they were SO EASY and so utterly and completely divine, that I decided this would be my go-to recipe for one of my all time favorite cookies, and I was so excited to finally find a recipe that lived up to the one from Einsteins! It really is genius! ;-)

Granny’s English Oatmeal Cookies

A couple of weeks ago my Mum and sister came to visit me from England (which probably accounts for why my Blog posts have been so sparse lately!) Sorry!! I hadn’t seen my mum in over two years, and my older sister for even longer than that, so it was amazing to spend some time with them and we had so much fun together! I got to show them what Halloween was all about up here in Mattawa (since it’s not that big in England), we got to tour Seattle for a couple of days, and we also did a lot of shopping in tricities… so I actually got a head start on Christmas (which never happens!) It was fun just having down time with them (and Downton time with them too… we finished off Season 3 which was just brilliant!) And it was great doing girly things and spending time in the kitchen cooking and baking together.

Double Chocolate Macaroons

This week I came down with the worst flu since I can remember, and I didn’t cook or bake a single thing…. [unless frozen chicken nuggets and corn dogs count!] :-/ Then this weekend my 3-year old Braden was asking for some candy and I realized the poor little guy hasn’t eaten anything yummy all week long, so I started looking through my cupboards, which of course were completely bare because I haven’t been able to do any shopping in a while. Then on display in my kitchen was a Wiliams Sanoma cookbook all about chocolate, and as I started flipping through it, I found this recipe for double chocolate macaroons that looked SO heavenly, and I knew it was time to get back to baking and blogging- and filling my family’s bellies with good stuff. They were pretty simple to make, but looked so elegant, and tasted seriously delicious!!! I will be making macaroons of every kind after trying this recipe! And here it is:
