Mango & Sticky Rice with Lime and Rainier Cherries

One of the BEST parts of country living is having access to so much delicious FRESH produce! Some good friends of ours just started growing Rainier cherries here in Mattawa, and they ended up with so much extra, they delivered crateful’s to all their friends and neighbors! We are so lucky!! We have been eating them like crazy, but since there’s so many, and there’s only 4 of us… I have been thinking of some delicious, creative ways to use them. Tonight I was making a traditional thai mango and sticky rice dessert, and thought i’d change things up a bit by adding some of the Rainier cherries, and a little lime! The dish not only turned out way more beautiful than usual… but the flavors worked so well together, it was delicious, and summery, and my little family loved it! We hope you do too! P.S. I wish I could share out some of these cherries!

Graduation Themed Funfetti Cupcakes

 

My little guy graduated from preschool last week, and a few of the mums got together to throw a fun little party at the park to celebrate the end of the kids first school year, and the beginning of their first ever summer holiday! We brought bubbles, water guns and water balloons, and they had fun running around like CRAZY as most 5 year olds do. I volunteered to bring all the kids a treat–and in asking Braden what he wanted, he didn’t hesitate to tell me “funfetti cupcakes” which are his favorite. After decorating them with sprinkles, they were so boring, I decided to make these little scrolls and caps to go on them, at the very last minute. I KNOW!! I am one of those annoying “pinterest mums” that over-does everything and makes other mums feel bad! :-( I didn’t want to be that cliche, but I did want the kids to LOVE their cupcakes, and they really did, so it was all worth it. They were fun to make, and were the hit of the party… not just with our little graduates, but with the Mum’s {I just didn’t dare tell them how much butter was in them!} ;-) I used the Cake Boss’ vanilla frosting recipe, which is my all time fave. And I thought I would post the recipe/idea along for all you other overachieving, pinterest mums out there, that live to put a smile on their kiddos faces!

Chocolate Mascarpone Tartlets with Raspberries

In the last couple of days I decided to take my food photography to another level, just because I got bored with my photos, and thought that if I was going to keep blogging recipes, I was going to try and do it right. I knew these raspberry tartlets would be pretty to photograph, but I also wanted to make them because I have never made a tartlet in my life–and thought I would try something new and different. Also, let’s face it, they just sounded pretty darn delicious! I think every dessert recipe I have ever posted involves chocolate of some kind {I am kind of obsessed} and this recipe involves both white and milk chocolate, as well as fresh raspberries and mascarpone which are two other of my favorite things. I read quite a few recipes that were tedious, complex and time consuming, and decided to create a recipe that was simple, quick and easy {as usual!} I absolutely love this recipe. This morning I woke up at 6a.m to do a grueling workout, and then totally cancelled it out by having one of these for breakfast! But it was SO worth it!! I hope you guys enjoy:

Dark Chocolate Cherry Chimichangas

I have noticed that I don’t tend to bake or make desserts unless there’s a special occasion, or reason to– but tonight I had tons of left-over cherries from dinner, and decided to make something super yummy with them, just because I was in the mood! There’s no better pairing for cherries than dark chocolate, so I already had those two ingredients figured out, and then I remembered a recipe I pinned on pinterest a really long time ago for apple pie chimichangas, and decided to make dark chocolate cherry versions! Some people have told me that I am really “brave” because I make all of these crazy things {they say “exotic” to be polite}, but actually–my husband is the brave one, because I make him try everything first. He absolutely loved these, and went back for more before I could even take my first bite! Not only were these super delicious, rich and just pure heaven on earth, but they were SO quick and easy to make too {I think 5 minutes start to finish}. So this recipe is definitely a new <3!

Mint Choc Chip Gelato & Grasshopper Sundaes

I am having way too much fun with my “green” theme for St. Patty’s this week, especially as i’m using it as an excuse to make mint chocolate chip gelato and grasshopper sundaes! I think mint chocolate chip has to be my favorite ice cream flavor of all time, and this gelato recipe isn’t only a lot healthier than regular ice cream, it actually tastes better too!! In fact it’s probably the BEST mint choc chip i’ve ever had, which is a problem because I just can’t get enough; but at least I have my two small kiddos to help me eat it {they’re as addicted to it as I am!} I’m pretty sure you will be too!
