Jessica’s Baby Shower

My sister in law is due to have her first baby next month, so last night we threw her a jungle themed shower for her baby BOY! I was in charge of cupcakes, but since i’ve had such a crazy week, I thought i’d keep them SUPER simple!

Fool Proof French Bread

Fool Proof French Bread

Today I made french bread for the first time ever! I’m not all that great at making things involving dough, so I thought it would be super complicated, but it actually ended up being one of the simplest, most fool-proof things I have made on my Blog so far, and it was SO GOOD!! I don’t think I will buy french bread in the store again now I know how easy, inexpensive, and just better it is to just make it! I love this recipe–mostly because I just love the smell of bread baking in my house, and eating bread warm right out of the oven too! This is such a great recipe to have on hand, because French bread is a good side to just about anything!! So here it is:

Banana Bread Pancakes

Banana Bread Pancakes

This father’s day, absolutely nothing went to plan!! My two small kiddos woke up sick, and whined the entire morning! Then to make things worse, they missed their naps because we needed to go to church to take pictures, so for the rest of the day they were even more whiney! I was trying to cook a special father’s day dinner for my hubby, but meanwhile, my son was clinging to my leg like a spider monkey crying to be held, whilst my daughter was throwing up–and my house had somehow gotten really messy, and then I realized, I hadn’t actually defrosted the meat for the dinner! So instead of shiny happy kids celebrating their Dad on father’s day, and a nice dinner of mini beef wellingtons, we had chaos and reuben’s at 9 o’clock at night. It was that crazy.

Rhubarb Ice Cream with Crumble Topping

Rhubarb Ice Cream with Crumble Topping

In England, Rhubarb Crumble with ice cream or custard (or in my Dad’s case, ice cream and custard) is a pretty traditional and popular dessert, especially around this time of year. Growing up my Mum and Granny both made rhubarb crumble a lot, and it was so delicious– that the other day when my friend gave some rhubarb from her garden, I knew exactly what I wanted to do with it.

Oreo Cupcakes

Oreo Cupcakes

This memorial day weekend, my mother in law is hosting a big family get together, and is doing all of the cooking, which I always love! (She’s amazing!) But of course, I wanted to do my part too, and help her out–so I asked what I could bring. She asked me to make cupcakes since she was short on dessert, but I didn’t have anything to make cupcakes with! Then I remembered a recipe I once saw on pinterest that called for boxed cake mix with pudding mix, and thought it was the perfect opportunity to try it. Neither of us had chocolate pudding mix on hand, but she had an oreo cake mix, which I thought was even better! So I went home and invented an oreo cupcake recipe, and it turned out SO amazing, I couldn’t wait to share it!! These are by far, the BEST cupcakes I have ever made. They’re moist and light and the frosting is seriously addictive! This will definitely be a go-to recipe in my house! <3
