A couple of weeks ago my Mum and sister came to visit me from England (which probably accounts for why my Blog posts have been so sparse lately!) Sorry!! I hadn’t seen my mum in over two years, and my older sister for even longer than that, so it was amazing to spend some time with them and we had so much fun together! I got to show them what Halloween was all about up here in Mattawa (since it’s not that big in England), we got to tour Seattle for a couple of days, and we also did a lot of shopping in tricities… so I actually got a head start on Christmas (which never happens!) It was fun just having down time with them (and Downton time with them too… we finished off Season 3 which was just brilliant!) And it was great doing girly things and spending time in the kitchen cooking and baking together.

American Stuffed French Toast with Peaches

I have come to find that English French Toast (also called “Eggy Bread”) and American French Toast are eaten in entirely different ways! In England our French bread is savory, (all that goes into it is egg and bread) so it’s quite normal to eat it with ketchup, or alongside a fry up! I even had a friend that ate her french toast with marmite… although i’m not sure that’s quite the norm! While in America, French bread is really sweet–they put cinnamon in their egg mixture, and serve it with syrup, berries and cream. I wish someone had told me about this sooner, because when I had french toast here in America, I would eat it with ketchup just the way i’ve always done… and it was SO gross!! I got some funny looks from my American family too… they still love to tease me about that! Anyway, I think in this instance, Americans have got it right! French toast was meant to be served with fruit and syrup and all things sweet, and this stuffed french toast recipe, which takes it one step closer to perfection with all that delicious cream cheese, will prove it! P.S. Whenever I think of maple syrup I think of ELF: “You like sugar don’t you?” “Does syrup have sugar in it? Then Yes!” My husband and I probably quote that every time we have it! I hope you guys like this recipe, especially my English friends who have been eating it all wrong! ;-) Ok. Not wrong, but just not in the BEST way!

When I was at BYU I had the opportunity to do a study abroad in Thailand for a few months, and while I was there, I fell in love with “Khao Niew Mamuang.” I’m not sure if I loved it so much because it was the BEST dessert they had in Thailand, or because it was the ONLY dessert they seemed to have in Thailand… but either way, it was awesome, and I probably ate way too much of it! My room-mate and I would go to the night-market quite regularly, and it was always served best out of plastic containers from the street vendors there.

Gemma’s 2nd Yo Gabba Gabba Birthday Party

This weekend was my little girls 2nd birthday! I have been planning her party for the last couple of weeks with the help of her big brother, Braden. He told me: “Gemma would like a princess Rapunzel party with pink balloons and a princess cake.” It’s so sweet how well he knows her, and how thoughtful he was too… but she was adamant that she got a Yo Gabba Gabba party instead. I even tried to talk her out of it, because my sons first birthday party was Yo Gabba Gabba themed too!!

I love Independence Day in Mattawa! My in-laws always host a huge party at their house with great food, swimming, shooting guns, and a huge fireworks display. They know how to celebrate holidays, but 4th of July is always the biggest, and they always go all out. This year they decided to keep things more ‘low-key’ but there are still 60 people coming for dinner–so I asked if I could bring something to help out, and I was assigned CUPCAKES!
