Isn’t it funny how us women crave quiet moments and downtime, then as soon as they come, we don’t know what to do with ourselves? I had one of those moments yesterday afternoon when my two small kiddos went down for their afternoon naps, and out of the blue, I decided: “i’m going to learn how to make fondant roses!” I know that’s weird. I probably should have just kicked my feet up, opened a bar of chocolate and turned on an episode  of ‘The Bachelor,’ but I was just in the mood to bake, and there was a whole batch of marshmallow fondant sitting in my fridge, staring at me!

Valentines Sugar Cookies with Royal Icing

This valentines I thought I would learn how to decorate delicious sugar cookies with a more-professional-looking royal icing technique rather than the regular frosting I usually slather on my cookies in a hurry. Usually I can get my baking to either look good, OR taste good–but I can never quite manage the art of both, so this time I was determined. I usually don’t do a whole lot for valentines, because my little guy was born on it, and I am usually making birthday cakes, and putting up balloons and birthday decorations, but since we’re still a week away, not only do I have the time to learn how to decorate beautiful valentines cookies… but I am still in time to teach you how to do it too! (Beginner to beginner!) I used the LionHouse sugar cookie recipe to make sure they tasted amazing, and kept with a really simple pink and white lace theme, which couldn’t have been easier for my first ever attempt at piping with royal icing! So here are a couple of recipes and tips that might come in handy this valentines:

Strawberry Rhubarb Pie

A friend of mine did a big favor for me a couple of weeks ago, so I told him I would make him his favorite pie as a thank you, and just as I was about to deliver it today, his wife actually invited us over for dinner, so we all got to share some for dessert. Luckily I had frozen some rhubarb earlier this summer so I was able to make this seasonal pie in the midst of wintery-January. Apparently my friend does this every year so she can make her husband his favorite pie for his birthday, which is also in January! So sweet!

BEST Chocolate Fudge Cookies ever

Chocolate fudge cookies are probably my favorite type of cookie in the whole world! When my husband and I lived in Utah we would go to Einsteins Bagels for lunch every now and then, and their chocolate fudge cookies were amazingly perfect! I have tried a few different recipes in the past to try and re-create ones that were as heavenly as those, but haven’t had any luck. Then a little while ago I found the idea on pinterest to use a box of fudge brownies to make them, and when I tried it out, they were SO EASY and so utterly and completely divine, that I decided this would be my go-to recipe for one of my all time favorite cookies, and I was so excited to finally find a recipe that lived up to the one from Einsteins! It really is genius! ;-)

Jam & Coconut Sponge

My Grandad turned 80 on sunday, and I wished so badly I could have popped over to see him in England because I miss him so much, but instead I called him for a chat and we were reminiscing a little bit. He said: “do you remember when you told your mother: ‘Mum, I don’t want to eat here, I want to go to Grandad’s house for dinner, because he cooks better.” We were laughing because as a kid I had no idea how offensive that would have been to my poor Mum! But while we had good food at home, it was always fun to pop next door to my Grandads house, and sit on his knee while he fed me, especially as they always had delicious desserts after every meal! One of my favorite things that he and my Granny would make was jam and coconut sponge, which is such a delicious, classic English dessert that just reminds me of them whenever I eat it.
