Blackberry Crumb Cake

I have noticed that I don’t usually tend to bake unless there’s a special occasion, event, holiday or birthday to bake for — but the other day I came across a recipe for this blackberry crumb cake, and it looked so divine–I just had to make it for no reason at all; other than I wanted to eat it! I have mentioned before how my little ones are obsessed with berries… to the point that they’d choose blackberries over candy, so I knew they would LOVE this cake–but my daughter Gemma just picked off the delicious crumb topping and ate the blackberries and left the actual cake! My husband loved the crumb topping so much too–that I decided to double the crumb topping in the recipe, because we all know it’s by far the BEST part! I put light sour cream in the cake itself, and I did start yoga a few days ago…. so I feel totally justified here! ;-) This cake is every bit, if not even more, delicious than it looks! I need to bake for no reason more often if i’m going to discover recipes like these! {Or NOT!!}

Easter Chick & Mini Bunny Cookies

I know Easter has already passed and i’m totally not on the ball — {as usual} but I thought i’d post up these cute Bunny & Chick Easter cookies I made over the weekend. I gave some away to my 11 year old primary girls at church and they LOVED them! Then we took some on our little family picnic where we had an Easter egg hunt down by the river. It was such a beautiful day–but I will post more about later, because I am adding a NEW TAB, under “Mattawa Life!” I know, it’s about time, and i’m pretty excited about it! Mint Choc Chip Gelato & Grasshopper Sundaes

I am having way too much fun with my “green” theme for St. Patty’s this week, especially as i’m using it as an excuse to make mint chocolate chip gelato and grasshopper sundaes! I think mint chocolate chip has to be my favorite ice cream flavor of all time, and this gelato recipe isn’t only a lot healthier than regular ice cream, it actually tastes better too!! In fact it’s probably the BEST mint choc chip i’ve ever had, which is a problem because I just can’t get enough; but at least I have my two small kiddos to help me eat it {they’re as addicted to it as I am!} I’m pretty sure you will be too!

For valentines day this year I made a raspberry soufflé which was one of the best desserts I have ever eaten–but I couldn’t post the recipe because I didn’t have any decent photos! Then last weekend my little family and I went on a trip to Seattle, and as we were exploring Pike’s Place Market I found a cool little store that sold herbs, spices and extracts of every kind: all for super cheap! So I was totally in my element, and I found some Rose essence, which I thought would be awesome in my raspberry soufflés, so I decided to make some more!

Recipe for English Pancake Day

Today is pancake day in England! The tradition comes from fasting and praying for 40 days before Easter — many people made pancakes to use up their butter and eggs which were often forbidden during lent (which starts on Ash Wednesday: tomorrow). I didn’t know this, but they celebrate Shrove Tuesday around the world–in Brazil with Carnival, and in New Orleans with Mardi Gras (“Fat Tuesday”). I mean, I knew about the holidays, but I didn’t know they were all celebrated on the same day! So basically the world are all out having wild parties today, while the English are staying home eating stacks of delicious pancakes! I like their style… {those kind of parties scare me!}
