Hi, i’m Sarah. Welcome to “Mattawa Mum” a place for me to share my life as an English stay at home Mum of two, in a small American farm town known as Mattawa. Life out here in the middle of nowhere has been one hard adjustment--I used to live an hour from London, and now I live an hour from a decent grocery store, but I have found that working hard, keeping busy and learning all I can, help me focus on more positive things as I grow as a wife, mother, artist, crafter, photographer, home-cook and now “Country-girl!” I hope you stay a while, and find something fun to read, cute to copy, or good to eat!

One of my husband’s all time favorite things to eat in the world is spaghetti bolognese, so when I found this lighter, girlier version of it, I knew he would be so happy! NOT. He actually hates spaghetti with a passion, which is why we probably don’t eat it every day like we used to when we were newly weds, {which is probably why he hates it so much in the first place!} But every now and then I just have to make it! Especially when the meatballs have melted mozzarella cheese inside! My kids loved this meal as much as I did, so I am going to have to make it again soon for sure (sorry Dean!) :-(

My mother in law is a pro at making home-made jam, and her raspberry jam is SO good, that my husband literally refuses to eat any other kind! The other day he wrote on my shopping list: “my Moms home made jam” so I told her about it, and the very same day we had a huge batch of it ready to fill up our freezer! {She’s amazing!} I was also talking to her about bacon jam. I have heard food blogger after food blogger rave about the stuff–and I knew that if everyone loved it that much,  and if it was made from BACON, then Dean was sure to love it! So she also whipped up a batch of bacon jam that night, and what’s funny is that I was the one who ended up LOVING it! I’m not even a guy, or a huge fan of bacon! It was just SO full of flavor: smoky, spicy, sweet and salty! I started thinking about all the things I could put it on, and defaulted to a delicious gourmet pizza. I had a hard time knowing what toppings to put on it, so I dipped a few different things in the jam–some things were HORRIBLE; like strawberries! But the red grapes complimented it perfectly. The combination of the bacon jam, cheese, soft pizza dough, bitter lettuce and sweet grapes was just divine! Now I am going to have to learn how to make her home-made raspberry jam, and this bacon jam too!

My husband loves buffalo chicken, and burgers, so this buffalo chicken burger was definitely one for him! He’s not really a fan of blue cheese so instead I decided to top the burgers with melted cheddar and some ranch coleslaw, which made it extra delicious! I hope you guys enjoy!

Quite some time ago I made a recipe for Oeufs Cocotte {French Baked Eggs} which was so simple and delicious, that when I came across a recipe for Mexican baked eggs on pinterest the other day, I just had to try it. I’m not a breakfast person at all, and TexMex is probably my least favorite cuisine, so I was actually really surprised by how much I loved this TexMex breakfast! Haha. Secretly, the more I make TexMex food, the more I am starting to love it, plus this dish actually made a really great dinner! The combination of melted cheese, fresh lime, and tortillas dipped in soft-eggs was just so good, I can’t wait to make this dish again, maybe even for breakfast this time!

I have been kind of drawn to stuffed avocado dishes lately. They look so pretty and gourmet, and yet so simple and delicious, which is totally my style, plus I love avocados! I pinned a couple of classic crab and shrimp stuffed avocado recipes on pinterest that I was excited to try, but then I thought; if I was going to make shrimp-stuffed avocados, I was going to use the BEST shrimp recipe I know of– which is of course Bonefish Grill’s Bang Bang Shrimp! I decided to top them off with a little melted cheese, and gave them an extra dash of sweet chilli sauce, and they were pretty darn divine! They were, however, pretty rich, so I paired them with a basic, healthy spring green salad and it made a delicious main course. Otherwise, I think these would be perfect served as an entree at a dinner party!
