Moroccan Chicken Wraps

I have never tried Moroccan food before, so this recipe even took me out of my “cooking comfort zone,” but i’m so glad I tried it, because I have discovered a new found love. This dish is FULL of flavors– sweet, spicy, salty, citrusy and a little tartness, which complement each other so perfectly, that this dish is sure to please everyone! It’s great served on a bed of light, fluffy couscous for dinner, but maybe even better for lunch the next day served up in a delicious wrap! I love the idea of making two dishes out of one workload! I hope you love these recipes too!

2 Tbsp olive oil, divided
4 chicken breasts, cut into bite-sized pieces
1/2 tsp cayenne/red pepper
1/2 tsp cumin
1/2 tsp garlic powder
1 tsp rock salt
1/2 tsp black pepper
1 onion, diced
1 red bell pepper, sliced into strips
2 carrots, peeled and sliced into rounds
1 14.5oz can chick peas, drained and rinsed
1 cup golden raisins
1 can tomato sauce
1 tsp chicken bouillon
1 -3 Tbsp chili garlic sauce {or favorite hot sauce + crushed garlic if desired}
goat cheese, lemon and parsley to serve

Heat the olive oil in a skillet over medium-high heat, add the chicken and seasonings: cayenne, cumin, garlic powder, rock salt and pepper, and stir to combine. Cook for 8-10 minutes, until the chicken is cooked through, or no longer pink in the center. Set aside. Heat another Tbsp olive oil in the same skillet, add the onion, bell pepper and carrots and cook for 5-8 minutes until softened. Add the chicken back to the pan along with the chick peas, golden raisins, tomato sauce, chicken bouillon, and chili garlic sauce. {Start with 1 Tbsp and add more according to desired heat}. Stir to combine well, and cook for 1-2 minutes to heat through. Add more salt and seasoning if desired. Squirt in some fresh lemon juice. Then serve on a bed of couscous, and garnish with fresh goat cheese and chopped parsley.

4mc02mc009 mc001For the Wraps: Spoon the couscous in a line in the center of a tortilla. Spoon a heaping amount of the moroccan chicken on top, sprinkle with a little parsley and crumbled goat cheese, and wrap. Top with additional sauce and veggies and goat cheese, then microwave on high for 1 1/2 mins until warmed through, and garnish with parsley.
