“What does the fox say? Happy Valentines!”

Next week on valentines day my little guy will be turning FIVE, and I am planning a big party for him, while taking care of 4 kids under the age of 5, so I figured i’d get a head start on some valentines projects this week instead! I wanted to make some cute valentines cookies for my sons class and his friends… but I didn’t want to do boring heart shaped ones. I got some cookie cutters on sale last week, and have been looking for a really good excuse to make some foxes! Then I thought of something totally clever, and was so proud of myself… until I looked online and realized 1000 people have already thought of the exact same thing! {Don’t you just HATE that!?} Anyway, “What does the Fox Say? Happy Valentines day!” Might be a very common and popular theme this year, but it doesn’t make it any less cute!! I love these fox cookies, and how they’re just “different” to your regular ones! I hope you like them too! Happy Valentines day!

Ingredients for the BEST sugar cookie recipe EVER: {from bakeat350}
3 cups unbleached, all-purpose flour
2 tsp baking powder
1 c sugar
2 sticks salted butter, softened
1 egg
1 tsp pure vanilla extract
1/2 tsp pure almond extract

{for my fave royal icing:}
4 cups SIFTED powdered sugar
4 Tbsp milk
4 Tbsp light corn syrup
4 drops lemon juice

Preheat oven to 350degF.

Cream the butter and sugar in the bowl of an electric mixer. Add the egg, vanilla and almond extract and mix for 1 minute until combined. Add the flour and baking powder, and mix, scraping down the bowl, for 3-4 minutes, until the mixture comes together to form a tight ball of dough.

Roll out to about 1/4″ to 3/8″ thick on a floured surface, and cut into fox shapes. Place on parchment lined baking sheets, then freeze for 5 minutes. Bake in the oven for 10-12 minutes, then transfer to a cooling rack.

For the royal icing: add the sifted powdered sugar, milk, corn syrup and lemon juice to a bowl (or mixing jug, so you can just pour it straight into the piping bag).

Fit a piping bag with a #2 tip (a really small round hole tip). Then pour half the mixture into the piping bag, and pipe the outline of the ears and mouth in white. Add more milk to the remaining royal icing, a tsp at a time {to make it a spread-able consistency} then with a knife, or spatula, fill the foxes ears and mouths. Set aside some white icing for the eyes for later.

Color the remaining icing with wilton Orange gel. Pipe the outline of the face in thick icing, {you might need to add more icing sugar and corn syrup}. Then add more milk to the icing to make it thinner, and fill the outline with orange for the foxes face.

Let dry. Then pipe white eyes, and place mini chocolate chips on top. I used an edible black pen to draw the mouth, then pressed a mini chocolate chip into the cookie for the nose.
