The BEST Raspberry Jam & 5 Gourmet Desserts to Make with it

My mother in law makes the BEST raspberry jam EVER! It’s so good that the entire family won’t eat any other kind, which is kind of a problem when you have a husband that always tells you: “You should make the kind my Mum makes!”  I kind of despise making jam, so I procrastinated it, then one day my mother in law surprised us with enough jam to fill half our freezer, and last us the year… {or at least half a year with the way we use it!}

I love the idea of having something on hand that you can always make things with in a pinch! That is why I decided to come up with 5 gourmet desserts you can make with this raspberry jam! It’s good for SO much more than PB&J’s and buttered toast! And the possibilities are endless… because this jam is made from fresh raspberries and sugar, you can substitute ANY recipe that calls for fresh berries and sugar: sauces, glazes, vinaigrettes, and endless desserts! Ingredients: {recipe from SureJell}
6 cups fully ripened raspberries
5 1/4 cups sugar
3/4 cups water
1 box fruit pectin

Directions:
Rinse and clean plastic containers with boiling water. Dry thoroughly.

Crush raspberries thoroughly, one layer at a time. (Press half of pulp through a sieve to remove seeds, if desired.) Measure exactly 3 cups crushed raspberries into large bowl. Stir in sugar. Let stand 10 min., stirring occasionally.

Mix water and pectin in small saucepan. Bring to boil on high heat, stirring constantly. Continue boiling and stirring 1 min. Add to fruit mixture; stir 3 min.or until sugar is almost dissolved and no longer grainy. (A few sugar crystals may remain.)

Fill containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Jam is now ready to use. Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year. Thaw in refrigerator before using.

Whip the raspberry jam with some heavy cream, and you have a delicious raspberry filling and topping for cakes and cupcakes! This is also delicious on pancakes, waffles and crepes! Mmmm.

#5 Raspberry Frozen Greek Yoghurt
Mix the jam with some greek yoghurt, then pour into your ice cream maker, or freeze in a container for a delicious, semi-healthy summer time dessert! I think I could eat this every day! You could also make raspberry ice cream, gelato, milkshakes and sorbets with the jam, and mix in other flavors too! froyo
