Perfect Potato Soup with Watercress & Prosciutto

My husband’s family are potato farmers out here in Mattawa, Washington, and because I can get as many as I like for free, I know I should cook with them much more often! I always have a huge box sitting in my pantry waiting to be used, so on the days when I don’t have something planned for dinner, I always seem to turn to this delicious potato soup recipe! It’s so flavorful and healthy by itself, but just like a baked potato, you can add so many different garnishes and toppings to it, that it’s sure to please everyone: watercress and prosciutto are my fave’s, my hubby loves spicy hot sauce, and the kids love cheese! I think that’s why this has become one of my favorite go-to family recipes, because it can be adapted so easily to please everyone! What toppings would you add?

Ingredients:
1 Tbsp Olive oil
1 Tbsp butter
1 small onion, diced
3 cloves garlic, minced
6 Tbsp all-purpose flour
2 tsp salt
2 tsp dried basil
1 tsp black pepper
6 cups chicken broth
4 large russet potatoes
1 cup heavy whipping cream
1/2 cup milk
{To Garnish}
hot sauce
Cheddar cheese
Prosciutto
Watercress

First, bake or microwave your potatoes. {They’re best baked, but if you don’t have time: prick the potatoes several times each with a fork, place on a dinner plate, then microwave for 5 minutes on high. Turn the potatoes over, then microwave for 5 more minutes}. When the potatoes are cool enough to handle, discard the skins, or “jackets” as we call them in England! ;-) And chop into bite-sized pieces.¬†

Melt the butter in the olive oil in a pan over medium-high heat. Sauté the onion and garlic until tender, and fragrant (2-3 minutes}. Stir in the flour, salt, basil and pepper; mix well. Gradually add broth. Bring to boil; boil and stir for 2 minutes.

Ladle half the soup into a blender, along with half the chopped, cooked potatoes, and blend until smooth and creamy. Add back into the saucepan with the remaining cooked potatoes, cream and milk and warm over medium heat, stirring constantly.

Ladle into bowls, and garnish with hot sauce, prosciutto, watercress, cheese and freshly ground black pepper, or any combination of the above.
