My New Fave Dinner Rolls

My little guy is the pickiest eater on the planet, but if there is one thing he LOVES and is guaranteed to eat {besides mac n cheese and PB&J’s} It’s warm, soft dinner rolls. I don’t make them as often as I should, but the other day I found a new recipe that is so fool-proof, quick and easy, that I thought i’d pass it along and post it up, because I will turn to it EVERY TIME! <3 it!

Ingredients: {recipe adapted from handletheheat}
{for the dinner rolls}
2 Tbsp butter, divided
1/4 cup water
1 cup milk
2 1/4 tsp {1 pkg} instant yeast
2 eggs
2 Tbsp sugar
1 1/2 tsp salt
4 1/2 cups all purpose flour, divided

Preheat the oven to 170degF, or it’s lowest setting, then turn it off. This will create the perfect temperature in your oven for the bread to rise in.

Combine 1 Tbsp butter, 1/4 cup water and 1 cup milk in a glass jug, and microwave for 1 minute until very warm.

Place the yeast in the bowl of an electric mixer, pour the warm milk mixture on top, stir, and let “froth” for a minute or two. Add 2 eggs, 2Tbsp sugar, 1 1/2 tsp salt and 2 cups flour, and mix with the paddle attachment until well blended.

Replace attachment with a dough hook, add the remaining flour, and knead for 3-4 minutes, until a soft ball of dough forms; it should be slightly sticky to the touch. Butter/grease the sides of the mixing bowl with olive oil, then cover with plastic wrap, and place in warmed oven for 45 minutes, until doubled in size.

Take dough out of oven, knead it a little in your hands, then form into a ball, and pinch of little balls of dough. Place onto a parchment lined baking sheet. There should be 12 rolls, enough to fill an entire sheet. Place back in oven for 30 minutes to double in size, then bake at 350degF for 17-20 minutes until golden on top. Brush with melted butter, and sprinkle a little rock salt on top if desired.
