Mother in Law’s Chicken Posole

My mother in law makes the most amazing soups, and my absolute fave. is her Chicken Posole, so this week I asked her if we could make some together– {and by this, I mean, she makes it, while I write down the recipe!} 😉 “We” made a large batch to fill my freezer, but it’s also a GREAT recipe to feed a crowd {which is another one of my mother-in-law’s fortes!} This recipe is not only super delicious, but is so quick, simple and inexpensive to make, and can be adapted in so many different ways. We added the peppers as a garnish at the end, to make the soup “kid-friendly.” You can also add sour cream, sliced radish, Pork, cabbage, fried corn tortillas, lime and cilantro to change it up according to individual tastes! I’ll have to keep this recipe close by for when I have a lot of hungry people to feed! Thanks so much to my amazing mother in law for sharing another one of her delicious recipes!

2 Tbsp olive oil
2 large onions, diced
4 cloves minced garlic
1-2 serrano peppers, finely minced
5 Qts chicken stock
6 chicken breasts, cut into bite-sized pieces
6lb can hominy
kosher salt & pepper
cilantro, lime & avocado to serve

Heat the olive oil in a large saucepan over medium-high heat. Sauté the onion until translucent (5-7 minutes), then add the garlic and peppers and sautee for 1-2 minutes, until fragrant. {Omit the peppers for a mild soup}.

Add the chicken stock and chopped chicken, bring to a boil, then turn the heat to medium, and simmer until the chicken is cooked all the way through {10-15 minutes}.

Rinse and drain the hominy, add to the chicken and stock, and heat through. Serve the soup with freshly chopped cilantro, lime juice, and avocado.
