Mango Chutney

I have this weird “thing” where I can’t eat Indian food without a side of mango chutney! {Mango chutney is kind of like the ketchup of English food! It just goes with everything!} 😉 But the problem is it’s pretty hard to find around here, and when I do come across it, a tiny bottle is like $10, and doesn’t last very long! So this week when I found a huge box of mangoes for $8 at Costco, I decided to make a HUGE batch of it to last us a while, and today I served it up with some delicious home-made samosas! I am so glad I finally have a go-to recipe for this stuff! I can’t get enough of it! I hope you all <3 it too!

Ingredients: {recipe adapted from simplyrecipes}
2 cups sugar
1 cup white vinegar
6 mangoes, peeled and diced
1 medium onion, diced
1/2 cup golden raisins
2 cloves garlic, minced
1 tsp ground ginger
2 tsp onion powder
1-2 tsp salt
1 tsp garam masala
1/2 tsp dry mustard

In a heavy-bottomed saucepan, cook the sugar and vinegar over medium-high heat, stirring constantly until sugar is dissolved. Add the remaining ingredients– mangoes, onion, golden raisins, garlic, ginger, onion powder, salt, garam masala and ground mustard, bring to a boil, then reduce heat and simmer for 50-60 minutes until thick. Taste and season with additional salt.
