I fell in love with Panna Cotta last summer when my husband and I stumbled upon one of the most fantastic little restaurants we have ever been to, in Skiathos, Greece. It has been in the back of my mind to learn how to re-create one like that ever since, but I think I have procrastinated the ‘challenge’ out of pure intimidation. I have watched Master Chef judge, Graham Elliot, and his contestants make them — some with great struggle, and some with such finesse, that I didn’t know which would be worse… not being able to make one as pretty and as perfect as Graham Elliot’s, or not being able to make one at all, like the contestants.

How to Cook Perfect Indian Pilaf/Pilau Rice

I mentioned recently that the “focus” of my Blog this year, is to create recipes that I would want to print in a personal cookbook, if I ever decided to publish one in the future. This helps give me clarity as I think carefully and more clearly about the recipes I would love enough to make time and time again, and be proud to pass on to my friends and family. I’m still learning, and am unsure what my “forte” might be, but one thing I DO know, is that this book would have one big, fat awesome indian section in it! I just love cooking and eating Indian food too much–it’s a problem, so much so, that i’m actually going to start doing Yoga or running first thing in the morning {I can’t decide on which yet}. I wish I could be more decisive in life! But all I know is that for now, I am going to be doing a lot of Indian cooking as I work my way through a list of popular dishes I am determined to master this year.

Life has finally started to slow-down, to the point where I can bake during the day for FUN and not because ‘I have to,’ {for someone or some special occasion}. I wanted to find a recipe that was quick and easy enough for the kids to help out, so we could have fun baking together, and to find a new go-to recipe that the entire family would LOVE, that wasn’t chocolate chip cookies–{boring!} My husband is REALLY difficult to please when it comes to desserts–he’d take a cheese-plate over a cupcake any day– but the one thing he does go crazy for is a crumble, so I decided to make these raspberry coconut crumble bars.

Mini Tepenade, Cherry Tomato & Mozzarella Pizzas

A couple of months ago my mother in law made us some tepenade flat-breads with prosciutto, sliced buffalo mozzarella cheese and freshly torn basil, which were pretty much pure heaven on earth, and a huge hit with everyone! I decided to recreate a similar recipe with mini pizzas. I already had a batch of tepenade in the fridge, so these came together so quickly and easily, yet seemed as if I had spent a lot of time and effort on them {just my kind of recipe!} This is one of my new absolute favorite go-to recipes when i’m in a pinch! <3 it & hope you do too!

Gourmet Shepherd’s Pie

On New Year’s Day I made a delicious, Roast Beef Dinner with Yorkshire Puddings and all the trimmings, and had a LOT left-over. Because a prime rib roast is quite an expensive cut of meat, I didn’t want to let it go to waste, so I decided to use it in a beef pot pie. I know this isn’t your average “shepherd’s pie” with left-over minced lamb, and mashed potatoes piled on top, but it did use almost every left-over ingredient from my roast dinner, so I feel as if I can call it a “shepherd’s pie”… just a jazzed up, more gourmet version. The left-over mashed potato was used to make a delicious, golden brown, flaky pie crust, the beef was added to a thick, flavorful red wine gravy, and I also added the left-over peas and carrots to the mixture for color and flavor. This dinner came together so quickly and easily, and was SO delicious–i’d even argue it was more delicious than the beef and yorkshire roast itself! This is one of the BEST pies I have ever eaten! I hope you all love it too.
