Festive Salmon Parcels

The other day my four-year old son asked if we could have salmon for dinner– which kind of sent me into a state of shock, because the only thing he only ever requests and eats is mac n cheese! So of course, I jumped at the chance to make him something a little different, and a lot more healthy, {and I love salmon too!} I found the idea for this recipe in my all time favorite food magazine that my mum and sister brought over for me from England last year, and I got to cross of just one of the hundred recipes I wanted to try from it! I made my little guy a plain lemon and butter salmon filet, but I wanted something less boring  a little “different!” I wasn’t sure if I could pull it off, and make the filo frills look pretty, or taste good, but I was shocked at how fun and EASY this was to make! Dinner was ready in under 30 minutes, although it seemed like I had put a lot more time and effort into it! I LOVE that! We need to have salmon more often, and i’m also excited to play around a lot more with filo too.

Ingredients: {recipe adapted from good house keeping christmas cookbook}.
4 salmon filets
large handful fresh parsley
2 Tbsp capers
finely grated zest & juice of 1/2 lemon
3 Tbsp olive oil, plus extra for brushing
1 pack filo pastry
kosher salt
freshly ground black pepper

Directions:
preheat the oven to 390degF. Put the parsley, capers, lemon zest & juice, olive oil and a pinch of salt and pepper into a food processor and pulse until well combined, but still with some texture.

Open and lay out the sheets of filo dough. Divide the sheets into 2 equal piles, then cut each pile in half so you have 4 equal mounds of filo sheets, that are just large enough to cover your filets. Season each filet generously with salt and pepper, then spread 1/4 of the parsley and caper mix on top of each filet. One sheet at a time, bunch the filo pastry on top of the salmon filet, pinching and crimping as you go. Repeat until all the filo pastry has been scrunched into frills, then brush with a little olive oil. Cook for 20 mins, until golden brown.

Serve with Tzatziki if desired.
