My husband oftentimes complains that I never cook beef– in particular, steak, which is his favorite. I guess it’s not something I had even noticed until he started pointing it out, and then I started wondering, why? Firstly, it could be that i’m not much of a “beef-eater.” I hate burgers, and I never ate steak growing up. Secondly, a good cut of steak is so expensive, that you might as well just eat out at a nice steak-house. There are so many around here, and whenever we go out to diner, my husband usually gets his “steak fix” so I feel as if I don’t need to cook it. Cheap cuts are just tough and BAD, so I don’t want to cook those. So my thinking, probably like most people, is: “why cook steak at home, when it’s just as expensive as eating out, and it doesn’t even taste as good?”

Mini Double Streusel Pumpkin Bread

This weekend my boys went to Seattle, and left us girls home alone, so we had some fun baking together. We made a pumpkin streusel bread {mostly because the boys both hate pumpkin, and us girls love it, so we seized the opportunity!} But we accidentally put too much mixture in the bread pan, and it over-flowed in my oven, smoking out my entire kitchen, and even though the bread had been in the oven for over an hour and a half, it wasn’t even nearly cooked through! So it was just a complete disaster. In fact, when I cut into it, and all the batter spewed out, it made my daughter gag, and she refused to try it! She is hilarious!

I have been searching for THE perfect chicken pot pie recipe for quite some time now, and am pleased to say, I have finally found it! The secret {like in most things} was to add a lot of cream and butter! This made my sauce super thick, and creamy and heavenly, and together with the warm, soft, flaky pie pastry, made this the BEST chicken pot pie I have ever had. This one is worth every single calorie-loaded bite, I promise you!

The other day I came across a recipe for Cafe Rio’s Chicken Tortilla Soup, and just had to try it! When I lived in Orem, Utah – where cafe rio was right around the corner – my husband and I used to go ALL the time, and order the same thing over and over, but I thought it would be fun to try something new… and make it myself, since we can’t go there whenever we want any more! :-( I was expecting this to be delicious… it is cafe rio! But what I wasn’t expecting, was for this recipe to become my new favorite soup of ALL TIME! I am absolutely LOVING this recipe, and can’t get enough of it! Chicken Makhani {Indian Butter Chicken}

Next to Chicken Tikka Masala and Chicken Coconut korma – which are the two standard Indian dishes you will find on the menu of every indian restaurant – the next most popular dish is probably chicken makhani, which is one of my all time favorites! When I was working as a waitress at an Indian Restaurant back in England, we got to have dinner after every shift, so I got to try lots of “weird” dishes I wouldn’t have usually ordered from the menu! Some people are fine just ordering chicken tikka masala every single time {my husband!} ;-) But if you are looking to try something new and different, without it being too “weird,” this would be the perfect dish for you to try! It has a creamy, tomato based sauce like the chicken tikka masala, but has added golden raisins and cashews and is a little sweeter like the coconut kurma– so it’s the perfect combination of both, and is SO delicious!
