Best Bombay Potatoes

A little while ago I created a recipe for a bombay house style Chicken Coconut Korma which is rapidly becoming one of my most popular recipes, and since the pictures were SO dull and unappetizing, I decided to update them this week, which meant I had a great excuse to make it again! I don’t usually think about sides, because the korma and chicken tikka masala are just perfect with white rice and garlic naan, but the next best accompaniment to those would of course be bombay potatoes (or bombay aloo). My family’s tradition when we went out for indian, was that some people ordered mains, and others would order sides, and then we would all just share–family style! Bombay potatoes were one of those must-order side dishes that everyone just loves! So here is my favorite go-to recipe in case you’re looking for a new delicious indian side dish to try with your coconut Korma or Chicken Tikka masala! Enjoy!

Ingredients: {recipe adapted from Jamie Oliver} 
3 Tbsp olive oil
1 tsp ground mustard
1 tsp ground cumin
1 tsp turmeric
1 tsp ground coriander
1 tsp garam masala
1 tsp chili powder
1 tsp ground ginger
2 tsp salt
2 Tbsp butter
6 potatoes, peeled, boiled and quartered
1 (15oz) can diced tomatoes
Handful fresh cilantro

Directions: 
In a frying pan, heat the oil and fry the spices for a few minutes over medium-high heat. Add the butter and potatoes, and stir until the potatoes are completely coated in the spices. Add the canned tomatoes, stir and heat through, then season to taste with more salt if desired. Garnish with fresh chopped cilantro.
