A couple of weeks ago we went sailing, for the first time, in the Puget sound with my mother and father in law, and absolutely loved it! Then last week my father in law asked us if we’d like to go sailing with them again, to the San Juan Islands, and of course we jumped at the chance! None of us had been before, and we were excited to maybe spot some killer whales– which these pacific northwest islands are world-renowned for.

Corn Fritter Stacks with Crab & Roasted Cherry Tomato Sauce

The other day I found a recipe on pinterest… {okay, how many times have I started a blog post out like this?} I know it’s sad, but really, I find all my best ideas and pinspiration there these days!  The recipe was for BLT corn stacks with chipotle bourbon dressing, and they just looked so delicious and beautiful; I thought i’d put my own spin on them. I decided to make the corn fritter stacks with crab, which is a classic pairing for corn and one of my very favorite ingredients this summer, and add a delicious roasted cherry tomato sauce– which compliments corn and crab perfectly! I LOVE how this recipe came together: not only did it take minutes to make and require next to no effort, but the flavors were just SO good together, and it looks so pretty too! Definitely a new favorite recipe. I hope you guys enjoy!

Chicken & Orzo Summer Salad

In one month it will be the end of summer–and we’re cramming SO MUCH into it, that I just know it’s going to fly by! This week we’re going to sail to the San Juan islands with my in-laws, and hopefully see some beautiful orca whales! When we get home we travel to GREECE just a few days later to see my sister get married in the beautiful island of Skiathos, and tour Athens a little. The day after we get back my little guy, Braden starts going to preschool every day! My husband turns the big 3.0, and hopefully he’ll also get his pilot’s license! I won’t have time to blog many more summer recipes before the end of the season, but I really wanted to squeeze this one in! I have been making a LOT of salads lately, probably due to the pressure of fitting into my bridesmaids dress AND spending a week on the beach! And this salad is one of my all time favorites!! Ok. So it’s not the healthiest, but it has a LOT of really good stuff in it so you can feel good about eating it, and it’s so flavorful because, just like the rest of my summer, it has a lot going on in it! Raspberry Gazpacho with Nectarine & Pistachio Crostini

Last summer I found a recipe for a strawberry gazpacho which was unexpectedly delicious, super elegant and healthy, and so simple to make! So this year I thought I would create a similar recipe using my all time favorite type of berry, and pair it with some yummy, seasonal nectarines on crostini. To be honest, this version tasted pretty darn similar to the other one, but ended up being SO much easier to make, because I didn’t have to hull and chop 6 cups of strawberries! I know a gazpacho might sound, and even look “fancy” but truly, it was one of the simplest, quickest things I have made in a really long time! It’s also one of the healthiest things I have made in a really long time– as it’s packed with berries, whole grains, and vegetables! So of course I had to pair it with some good ol’ carbs, salty pistachios and sweet fruit. This meal ended up being really fun to make, really pretty to look at, and of course, really yummy to eat! Best Bombay Potatoes

A little while ago I created a recipe for a bombay house style Chicken Coconut Korma which is rapidly becoming one of my most popular recipes, and since the pictures were SO dull and unappetizing, I decided to update them this week, which meant I had a great excuse to make it again! I don’t usually think about sides, because the korma and chicken tikka masala are just perfect with white rice and garlic naan, but the next best accompaniment to those would of course be bombay potatoes (or bombay aloo). My family’s tradition when we went out for indian, was that some people ordered mains, and others would order sides, and then we would all just share–family style! Bombay potatoes were one of those must-order side dishes that everyone just loves! So here is my favorite go-to recipe in case you’re looking for a new delicious indian side dish to try with your coconut Korma or Chicken Tikka masala! Enjoy!
