Dark Chocolate Cherry Chimichangas

I have noticed that I don’t tend to bake or make desserts unless there’s a special occasion, or reason to– but tonight I had tons of left-over cherries from dinner, and decided to make something super yummy with them, just because I was in the mood! There’s no better pairing for cherries than dark chocolate, so I already had those two ingredients figured out, and then I remembered a recipe I pinned on pinterest a really long time ago for apple pie chimichangas, and decided to make dark chocolate cherry versions! Some people have told me that I am really “brave” because I make all of these crazy things {they say “exotic” to be polite}, but actually–my husband is the brave one, because I make him try everything first. He absolutely loved these, and went back for more before I could even take my first bite! Not only were these super delicious, rich and just pure heaven on earth, but they were SO quick and easy to make too {I think 5 minutes start to finish}. So this recipe is definitely a new <3!

Ingredients {for 2 chimichangas}
2 tortillas
1 cup cherries, pitted and halved
1/2 cup dark chocolate chips
1 Tbsp cinnamon
1/2 cup sugar
Canola oil for frying
chocolate syrup to serve

Directions:
Lay the cherries in the center of the tortilla & sprinkle the chocolate chips on top:
SONY DSCFold in both ends of the tortilla, then roll up tightly, so that it’s sealed like a burrito. Mix the cinnamon and sugar in a shallow bowl and set aside.

Heat 1-2inches of oil in the bottom of a high-sided skillet, then gently lower the chimichangas into the hot oil with some tongs. Fry the chimichangas on all sides until the tortilla turns golden brown (about 30 seconds per side). Set on some paper towels for a few seconds to drain, then immediately roll in the cinnamon-sugar and coat well.

Drizzle some chocolate syrup on top, and serve immediately.
