It’s just not summer-time without grilling up a delicious burger, so I thought I better add one to my seasonal repertoire. I’m not really a ‘burger person’ which might explain why this is the first one I have made or eaten all spring & summer, but I do love Indian flavors, so I thought an indian-spiced chicken burger would be delicious! I used the same ingredients in my Bombay House chicken tikka recipe which I love so much, and added a fresh cucumber-mint raita, which complimented the burger perfectly in every way. If you love bombay house, and you’re craving a delicious burger this summer, you have to be brave and try this, because it’s seriously delicious!

BBQ Chicken Pizza with Grilled Peaches, Jalapeños & Arugula

If there is one thing I absolutely looove to cook, it’s gourmet pizzas! I know I mention this all the time! My ‘cheater’ store-brought pizza base is basically just my blank canvas to create something totally unique, beautiful and gourmet in minutes flat–all the while making it appear as though I have been slaving over dinner for hours. I knew I wanted to make something with fresh peaches and my favorite home-made BBQ sauce, just because it’s summertime! Then I couldn’t choose between prosciutto and chicken, so I added both–why not? Then a little jalapeño for heat and some peppery arugula to balance out the sweetness! Et voilla! A gourmet, summer-time pizza that is OH so divine!! I hope you all enjoy!

Chipotle Lime Fish Tacos

The other night I made some delicious fried chicken and coleslaw, and since I had a lot of the coleslaw left-over, I decided to use it to make some yummy fish tacos. When my husband and I were freshmen at BYU, we went to Betos with our best friend, Brandon {this cheap Mexican joint, that was SUPER dodgy, but extremely popular}, and Brandon somehow convinced me to get the fish tacos! I had never had one before, but he said they were so good they’d pretty much change my life, so I went for it… and they were GROSS. The taste and smell of fish lingered with me for days after, and made me feel really sick. Then last summer I felt brave and made some fish tacos at home…. and the smell lingered in my house for days, and again– just made me feel pretty sick! Honestly, I don’t know what convinced me to try fish tacos again, but just because they seem to be a classic summer dish, and something that’s kinda healthy that I could whip up in minutes, I decided to give them another shot. It must be three times lucky, because finally I found a delicious fish taco recipe that even I would eat! The list of ingredients is ridiculously long, but if you have some left-over coleslaw, or even make it ahead of time, you can whip up these fish tacos in 15 minutes! They’re colorful and pretty, pretty-healthy, and full of flavor! I need to invite my friend Brandon to dinner! ;-)

Chocolate Mascarpone Tartlets with Raspberries

In the last couple of days I decided to take my food photography to another level, just because I got bored with my photos, and thought that if I was going to keep blogging recipes, I was going to try and do it right. I knew these raspberry tartlets would be pretty to photograph, but I also wanted to make them because I have never made a tartlet in my life–and thought I would try something new and different. Also, let’s face it, they just sounded pretty darn delicious! I think every dessert recipe I have ever posted involves chocolate of some kind {I am kind of obsessed} and this recipe involves both white and milk chocolate, as well as fresh raspberries and mascarpone which are two other of my favorite things. I read quite a few recipes that were tedious, complex and time consuming, and decided to create a recipe that was simple, quick and easy {as usual!} I absolutely love this recipe. This morning I woke up at 6a.m to do a grueling workout, and then totally cancelled it out by having one of these for breakfast! But it was SO worth it!! I hope you guys enjoy:

Pork Tenderloin with Jalapeño Cherry Salsa

I love cherries, and since they’re in season right now I thought I would use them to make a delicious salsa. Usually i’m pretty afraid of jalapeños, because i’m a big sissy when it comes to heat… but the sweetness of the cherries balanced out the heat perfectly, and made this dish so flavorful and delicious! I also love the colors in this dish–it looks so pretty and gourmet, yet was SO quick and simple to make! It’s also pretty healthy too! So, really it’s a pretty perfect summer-time meal that I will definitely be making again before the season ends!
