The Perfect Chicken Fettuccine Alfredo <3

Fettuccine Alfredo is a family fave. in our house, so it’s about time I found an AWESOME recipe to make it. I have tried several different variations in the past; Carrabba’s version, the famous Olive garden recipe, a couple of highly-rated online recipes as well as my own ‘experimentations:’ and none of them have ever been perfect. Then today I stumbled upon the BEST alfredo sauce I think I have ever tried in my life, from ourbestbites, and just to make it even better, it was by far the healthiest version I have ever tried too! I am so in love with this alfredo recipe, that it will be the one I use time and time again for my family! It was thick and creamy and had the right balance of everything! Yeah, it’s just pretty much perfect!
Ingredients:
1 box Fettuccine
2 broccoli florets
2 large chicken breasts, halved lengthways {or 4 small}
1-2 Tbsp Olive oil
freshly ground black pepper
{for the alfredo sauce}
2 cups milk
1/3 C (3 oz) low fat cream cheese
2-3 T flour
1 t salt
1 T butter
3 garlic cloves
1 C grated Parmesan cheese
Directions:
Bring a large pot of salted water to a boil over high heat. Meanwhile, heat 1-2 Tbsp olive oil in a pan, season the chicken generously with salt and pepper and cook for around 5 minutes per side until done, or no longer pink in the center. Add the pasta to the boiling water and cook according to package directions (around 8-12 minutes).
You can add the broccoli to the boiling pasta water 5 minutes before the pasta is done to make this dish really simple, or steam over some lemon-water, or sauté in a little olive oil and crushed red pepper for 5-8 minutes to make it crisp tender and a little more flavorful.
For the sauce, place milk, cream cheese, flour, and salt in a blender and blend until smooth. In a saucepan, melt the butter over med-high heat and sauté the garlic in the butter for about 30 seconds, until fragrant. Add the milk mixture to the pan, stir constantly for about 3 or 4 minutes until it just comes to a simmer. Keep stirring and let it cook for a few more minutes until thickened. Add the cheese, stir well to combine, and serve immediately over the pasta and broccoli. Serve with more parmesan and freshly ground black pepper.

Ahahahaha! I had completely forgotten about that! “You can’t go wrong with alfredo!” {And then they brought out a dish that tasted like pure black pepper!} Gross! I’ll go back and show them how to make a REAL alfredo!
