The other week my husbands friends at the office made an authentic Mexican Aguachile recipe, which he couldn’t stop raving about for days! He came home and told me: “I have something for you to make” then went on to describe this raw shrimp and lime dish with chiles, tostadas and mayo, and to be honest, I was a little freaked out! I didn’t really want to make it, but then when father’s day rolled around and I brainstormed all of my husbands favorite dishes, I knew he would love this one the best. So I called my friend, Patty at the office and asked her for her recipe, and she was REALLY kind to explain in depth how to make it, serve it and eat it, because I was totally lost, and out of my comfort zone! This is the FIRST authentic Mexican dish I have ever made, and posted on my blog, but definitely not my last! It turned out to be so fresh, flavorful and delicious– that I could see what my husband was raving about, and it turned out so great, that it definitely made his day today!
Ingredients:
2 lb raw, peeled & de-viened shrimp (preferably with tails off)
10-15 limes
2 jalapeƱos (stems removed)
1 small red onion, sliced into half-moons
1 cucumber, peeled and sliced into rounds
1 pinch chiles pequin
Tortilla chips or tostadas to serve
Mayo (optional)
Directions:
Place the shrimp in a large bowl, then juice enough limes to completely cover the shrimp. Add the slices of red onion, then cover tightly and place in the fridge, anywhere from 2 hours to overnight. {The longer the better, because the shrimp will be better ‘cooked,’ and have a stronger flavor).
When ready to serve, Scoop 2 cups of the lime juice from the bowl and add to a blender with the jalapeƱos and chiles pequin. Pour the lime juice back into the bowl with the shrimp, and add the sliced cucumber.
Serve with tortilla chips or tostadas. This dish is extra delicious with a little mayo spread on the tostada, as it cuts the acidity of the lime juice really well.
