The Perfect Chicken Fettuccine Alfredo <3

Fettuccine Alfredo is a family fave. in our house, so it’s about time I found an AWESOME recipe to make it. I have tried several different variations in the past; Carrabba’s version, the famous Olive garden recipe, a couple of highly-rated online recipes as well as my own ‘experimentations:’ and none of them have ever been perfect. Then today I stumbled upon the BEST alfredo sauce I think I have ever tried in my life, from ourbestbites, and just to make it even better, it was by far the healthiest version I have ever tried too! I am so in love with this alfredo recipe, that it will be the one I use time and time again for my family! It was thick and creamy and had the right balance of everything! Yeah, it’s just pretty much perfect!

Summer has officially arrived, although it’s hard to tell here in Mattawa as it won’t stop raining! Despite the bad whether i’m determined to move forward with a whole new season of summer-time recipes and get my grill-0n, {even if it does have to be indoor pan-grilling for now!} I have also decided to step up my game just a little, by making some extra creative, extra delicious and extra-fresh seasonal recipes that are some of my BEST yet. Today I made one of the most delicious meals I have ever made in my life! I was a little worried about how the strawberry-peach chutney would turn out, because let’s be honest; it has a lot of strange ingredients! But the whole dish was so perfectly balanced, and SO flavorful, it totally blew me away!

The BEST PB Choc Chip Cookies

A few weeks ago my friend Patty brought me the Cake Boss {Buddy Valasto’s} Cookbook, and I have loved everything I have made from it so far! I made a batch of his peanut butter chocolate chip cookies for my kids and babysitter the other night when my husband and I went on a date to watch the new man of steel movie (which was awesome!) And my kids have not stopped raving about them since! {My son Braden who’s 4 is the biggest cookie-dough fiend I know!} So today I decided to make some more. Since this recipe is a new family fave and i’m sure I will be referring to it a lot, I decided to write it up: I didn’t change the ingredients, but I re-wrote the directions to make them a lot simpler and shorter. Instead of rolling them out into a log shape and cutting them (which took a whole page to explain) I decided to just make 1/4 cup, big, soft ones and change up the cooking temperatures and times. These are by far the best PB chocolate chip cookies I have ever had! I LOVE this recipe! I know you guys will too!

Mediterranean Curried Couscous with Shrimp

Life has been a little crazy lately, so for dinner tonight I decided to make the quickest, easiest fix I could think of. I kinda cheated with this one and used a box of mediterranean curry mix which takes 5 minutes to prepare and cook! Adding shrimp which cooks just as fast, along with some cherry tomatoes and artichoke hearts, makes this dish a cinch to prepare and cook, looks really pretty, and tastes super yummy! This recipe is definitely a good go-to dinner for crazy busy summer evenings!

Ribs Agrodolce {Sweet & Sour Ribs}

Those of you who read my blog know i’m kind of obsessed with Italian food, in particular Carrabba’s Italian Grill, which I think is some of the BEST Italian food there is. Everything I have ever tried at the restaurant, or made at home from their cookbook has been AMAZING, and these sweet & sour ribs are definitely no exception! Usually i’m not a big fan of ribs: they tend to be either fatty and oily or dry and over-cooked, and they’re just so heavy, messy, and “manly,” but this recipe cooks them to spot-on perfection, and I promise, they’re unlike any ribs you have ever had before! I <3 this recipe.
