Bacon Jam Pizza

My mother in law is a pro at making home-made jam, and her raspberry jam is SO good, that my husband literally refuses to eat any other kind! The other day he wrote on my shopping list: “my Moms home made jam” so I told her about it, and the very same day we had a huge batch of it ready to fill up our freezer! {She’s amazing!} I was also talking to her about bacon jam. I have heard food blogger after food blogger rave about the stuff–and I knew that if everyone loved it that much,  and if it was made from BACON, then Dean was sure to love it! So she also whipped up a batch of bacon jam that night, and what’s funny is that was the one who ended up LOVING it! I’m not even a guy, or a huge fan of bacon! It was just SO full of flavor: smoky, spicy, sweet and salty! I started thinking about all the things I could put it on, and defaulted to a delicious gourmet pizza. I had a hard time knowing what toppings to put on it, so I dipped a few different things in the jam–some things were HORRIBLE; like strawberries! But the red grapes complimented it perfectly. The combination of the bacon jam, cheese, soft pizza dough, bitter lettuce and sweet grapes was just divine! Now I am going to have to learn how to make her home-made raspberry jam, and this bacon jam too!

1 pizza crust
1/2 cup bacon jam {she used this delicious recipe from}
olive oil
Salt and pepper
1 1/2 cups mozzarella cheese
1 small bag mixed lettuce with arugula
1 1/2 cups red seedless grapes, halved

Preheat the oven to 450degF. Spread the bacon jam on the pizza crust,  top with the mozzarella cheese and bake for 8-10 minutes until the cheese has melted, and the bacon jam is bubbly.

In a bowl, toss the mixed lettuce with a little olive oil and season well with salt and pepper. Place the lettuce in the middle of the cooked pizza, and top with the grape halves.

One guy put it in a sandwich with peanut butter and marshmallow fluff. Until that time, I thought bacon jam would be delicious on just about anything! Haha. But NOT THAT! Everyone there was pretty scared to try it, like I was, but then ended up loving it — so if you have never tried bacon jam before, you definitely should! Then use some to make this delicious pizza–because I know you will love it!
