Healthy Quinoa Chicken Divan

Quinoa (“Keen-wa”) is one of those foods that’s SO heathy and good for you, that I have been really determined to get to like it– but it’s been a little tricky for me since I have been trying all of the WRONG recipes! The other day I made a warm quinoa greek salad in pitas, and it was so bad and acidic it almost put me off greek salads for life! I can’t remember the other recipes I have tried for quinoa in the past, but they can’t have been good–because I would have posted about them!

Blackberry Crumb Cake

I have noticed that I don’t usually tend to bake unless there’s a special occasion, event, holiday or birthday to bake for — but the other day I came across a recipe for this blackberry crumb cake, and it looked so divine–I just had to make it for no reason at all; other than I wanted to eat it! I have mentioned before how my little ones are obsessed with berries… to the point that they’d choose blackberries over candy, so I knew they would LOVE this cake–but my daughter Gemma just picked off the delicious crumb topping and ate the blackberries and left the actual cake! My husband loved the crumb topping so much too–that I decided to double the crumb topping in the recipe, because we all know it’s by far the BEST part! I put light sour cream in the cake itself, and I did start yoga a few days ago…. so I feel totally justified here! ;-) This cake is every bit, if not even more, delicious than it looks! I need to bake for no reason more often if i’m going to discover recipes like these! {Or NOT!!}

Lamb Tagine with Apricots

Spring is the only time of year I can find lamb around here, and since apricots are in season too, I thought I would have a go at making a traditional Moroccan Lamb Tagine while I had the chance. I tried a recipe last Spring that called for a home-made harissa {because they don’t sell it in stores here} and it was WAY more work and effort than it was worth, so I was reluctant to try making another; but then I discovered if you substitute sriracha (a garlic chilli sauce) and add fresh lemon juice, it’s just as delicious and a heck of a lot SIMPLER. I love how flavorful this dish is since it has a little bit of everything going on–sweet, salty, citrusy, spicy; plus it also made my house smell amazing too! I hope you guys like this recipe as much as we did: and you better, because it will last you an entire week ;-) {p.s. feel free to halve it}

Since artichokes are in season right now I decided to make a classic pasta, chicken and artichoke hearts dish, by adapting my favorite lemon chicken piccata recipe, and it turned out to be so utterly and totally divine, I couldn’t wait to share the recipe!
