Green Monster Smoothie

Last week was St. Patrick’s and I had every good intention of posting all kinds of cute cupcakes and cookies, Shamrock Shakes, and Irish Flag Trifles– and then I decided I didn’t want to make all of that–because I didn’t want to eat it! I know this Healthy Monster Smoothie sounds WAY less exciting than all of that– but I think most of us are on the same page around this time of year; ready to get back into shape after a long winter, and feel GREAT again! So, I decided to make a really GREEN healthy smoothie, which was still in keeping with my St. Patrick’s theme! This smoothie is so rich, creamy and yummy that’s it’s hard to imagine how much spinach is in it! Usually i’m against smoothies, because I like to eat berries rather than blend them up and drink them… but there’s no way i’d ever eat this much spinach first thing in the morning, so blending it up with some banana, peanut butter and greek yoghurt is definitely the way to go– because you can’t even tell it’s in there! It’s pretty awesome!

Ingredients: for 2 shakes
2 bananas
2 Tbsp peanut butter
1/2 cup greek yoghurt
1/2 cup-1 cup low-fat/soy or almond milk
Handful of ice

Place the bananas, peanut butter, yoghurt, milk and ice in a blender and put enough spinach leaves in there to fill. Blend well, then fill up to the top of the blender with spinach again and blend once more! Here are my little helpers: even they liked this smoothie! Score!

Now I just need to start working out again! This time last year I had Hawaii to motivate me, so it was easy! This year i’m not going on my summer’s vacation t’ill September, so i’m being a lazy procrastinator! But I am definitely ready to start cooking some healthy, fresh, seasonal spring time meals again!

I hope you like this recipe guys! Even if it’s not as delicious as cupcakes– it’s pretty darn delicious considering how amazingly healthy it is!
