Carnitas Tacos

The other day I mentioned that I was going to post an awesome recipe for valentines, which was one of my husbands all time favorite things to eat. First up, the guy is so logical and practical that “favorite” isn’t really in his vocabulary… which is why I usually decide what his “favorites” are, because I know him so well! ;-) But last week, for the first time ever, he actually told me he had a favorite…. and I was SO MAD when he told me it was freaking BAGEL BITES! Of all the delicious things I have learned to cook for him and my little family, he chose processed frozen pretend tiny pizzas over my delicious cooking! WHAT the heck?! I think he felt me stabbing him with my dagger eyes, or saw steam coming out of my nose and ears, because he quickly changed his mind to “Pizza in General.” Okay, I can work with that.

So for valentines day, I made him a southwest chicken pizza from CPK which I know he loves. That’s the recipe I was going to post…. but it took me So ridiculously long to make it, that I decided I never wanted to make it again, so there was no point in posting it. However, I did end up finding one of the BEST desserts of all time EVER! A raspberry soufflé that was not only super simple, quick & easy but looked SO elegant, tasted so utterly and totally divine, and was pretty darn healthy too! (I can’t believe one of the most delicious things I have ever eaten is completely fat free!) I didn’t get a decent picture because it was late (and there was no light) but in the next couple of days I will post that recipe.

P.S. After spending hours getting ready, making that SUPER annoyingly-complicated pizza and the raspberry soufflés, my husband forgot that he actually had to be somewhere that night (helping with a youth night at my church), I should have just microwaved him some bagel bites after all. I was SO mad at first, but then my little boy said: “don’t worry mum! I will eat your food!” And so we baked up a couple of soufflés, had fun watching them grow in the oven, and I even got my little girl out of bed so she could have some, because it was THAT amazing! Then my husband got home, and we got to have a nice {late} dinner together… so it all worked out.

Wow… now I have written so much about valentines, I won’t go on about these carnitas tacos as well! But let me just say, this really was a recipe worth posting. SUPER simple, and SO delicious!! I don’t cook a whole lot of Mexican food, but I am really starting to warm up to it. These were absolutely delicious–so I hope you enjoy, and I hope you check back soon for that raspberry soufflé recipe too!

Ingredients:
{For the Pork}
2.5lb pork roast
4 tsp chilli powder (preferably ancho)
1 Tbsp rock salt
1 tsp black pepper
Juice of 1 orange
4 cloves minced garlic
1-2 Tbsp Canola Oil
{For the tacos}
Tacos (or tortillas)
Purple Cabbage, thinly sliced
2 Avocados, Cubed
Bunch cilantro, Chopped
Limes
Tomatoes, Chopped
Scallions, chopped
feta/cotija cheese, crumbled

Directions:
Place the chilli powder, salt and pepper in a dish. Cut the pork into 4 equal pieces, then rub in the spices
Heat the oil in a pan over high heat, add the pork and sear on all sides until browned (about 3 minutes a side without moving or turning)
 Add the garlic and orange juice and pour water to cover the pork
Boil for 1 1/2 hours until the liquid has been reduced and thickened, then shred the pork with two forks
Leave to boil further if sauce needs to thicken. Meanwhile, prepare the other ingredients for the taco: warm the tortillas and chop the vegetables. Place some of the meat in a taco, top with the cabbage, tomatoes, avocado, green onion, cheese and cilantro, and serve with freshly squeezed lime juice.

We also tried this with warmed flour tortillas and sour cream… and they were so yummy! MUCH yummier than frozen bagel bites!
