Winter Citrus Salad with Pistachios, Goat Cheese & Blackberries

My husband has been out of town for a few days on a gun course in Nevada with his Dad and brothers, so for the last few days I have had fun making “girl food” like this meatless-salad, full of berries and citrus and all things healthy. I love fruit and vegetables of every kind, but what surprises me is how much my kids do! On friday we had a girls night with kinect dancing games and a HUGE chocolate cake which was to-die-for delicious, and when I offered some to my 2 year old girl, she said she’d rather have an orange. I mean, I do love fruit, but i’m not healthy enough to choose it over chocolate! So, I am VERY impressed, and very blessed to have such healthy kiddos {and take no credit for that whatsoever}! When I was making this salad, it was fun to give them handfuls of blackberries (which they love even more than candy, i’m not kidding!) And Cara Cara oranges which my girl loves, because she thinks they’re “pink!”

Strawberry Rhubarb Pie

A friend of mine did a big favor for me a couple of weeks ago, so I told him I would make him his favorite pie as a thank you, and just as I was about to deliver it today, his wife actually invited us over for dinner, so we all got to share some for dessert. Luckily I had frozen some rhubarb earlier this summer so I was able to make this seasonal pie in the midst of wintery-January. Apparently my friend does this every year so she can make her husband his favorite pie for his birthday, which is also in January! So sweet!

A little while ago a reader asked me if I would create a recipe for Bombay House’s Tezpur Pineapple Shrimp– but there was no way I could because I had never tried it before, and wouldn’t get the chance to try it either since I now live in Washington State. Then when I recently posted a recipe for Chicken Kurma, another reader told me if I substituted the chicken for shrimp and added pineapple, I would basically have the Bombay House Tezpur Pineapple Shrimp recipe, so I thought I would try it out and see!

This week I finally finished my sons bedroom!

I had kind of a hard time deciding on a theme for him because he loves so many different things! He’s pretty obsessed with tractor’s and since my husband’s family are farmers and we’re always surrounded by them here in Mattawa, I thought that would be a cool theme to go with. He also loves airplanes though, and since his Daddy is just a test away from getting his pilot’s license, I thought that would be a pretty sweet theme too! Then there’s motorbikes… another little obsession of his! His Daddy, Grandpa, and all his uncles are pretty avid Harley riders, so I knew he’d love a motorbike room too, so I had a hard time choosing just one thing. So basically, I ended up with an agglomeration of all the things he loves: ANYTHING WITH WHEELS! Planes, trains, trucks, cars, tractors, motorbikes…just transport in general. More
