My Favourite Rice Pudding Recipe

I came across this recipe the other day completely by accident. I had a lot of left over rice I needed to use, so I wanted to find an AWESOME rice pudding recipe for a cold December evening… one that was SO delicious my picky little two year old would even want to eat it, and I lucked out by finding the BEST rice pudding recipe ever, right off the bat. Speaking of lucky… I just went to a christmas party tonight and won $100 visa card! It was at an ugly sweater party with the craziest white elephant gifts you have ever seen! My brother in law got a nacho libre mask, my friend got a new pet FISH! My husband got a moustache baking pan… which I will have to put to good use! And I got 15 scratch cards… which I won $3 from. Maybe the lucky streak didn’t continue there! But I had an absolute blast.
It’s definitely more fun talking about the party than rice pudding, so i’m completely side-tracked, but all I need to say about this recipe is that it’s amazing because of it’s secret ingredient: LEMON! I would never have thought to add it, but luckily Tyler Florence from the food network did, so I thought I would pass along my new all time favorite recipe for rice pudding, and it couldn’t be any simpler to make!
Ingredients:
3 cups cooked white rice
3 cups milk
2/3 cup sugar
2 Tbsp butter
1/2 cup golden raisins
1 tsp vanilla extract
zest of 1 lemon, grated
1 tsp cinnamon, divided
Directions:
Combine the cooked rice, milk, sugar and butter in a medium saucepan. Add the raisins and vanilla. Cook for 25 minutes until most of the liquid is absorbed. Mix in the lemon zest and 1/2 teaspoon of cinnamon. Spoon the rice pudding into a serving dish and dust with the remaining cinnamon. Serve hot or chilled.
This is my new favorite rice pudding recipe… not only because it was SO simple and SO YUMMY, but because it even passed the “kid test.” Oh Yeah!

Yep, it’s six pints of full fat milk, and twelve to thirteen table spoons of pudding rice then just boil up till it’s thick and then add three to four table spoons sugar, it will take about an hour to boil and get thick, when the milk starts to boil up the pan turn the heat down a bit. this makes A LOT so feel free to halve it, then eat it warm with a bit of butter on top and a cinnamon sugar mix… Careful the milk and rice doesn’t burn at the bottom of the pan so must stir it a lot….we have this every christmas x
